9 Places for the Best Carbonara in Rome, According to Locals

Rome, the eternal city, is not only famous for its rich history and magnificent landmarks but also for its divine cuisine. Among the various sumptuous dishes this city has to offer, Carbonara is a quintessential Roman pasta that both locals and tourists crave. Derived from ‘carbone’ meaning coal in Italian, some believe this dish was once a hearty meal for Italian coal miners. Made with eggs, Pecorino Romano cheese, guanciale (cured pork cheek), and plenty of black pepper, Carbonara’s simplicity is deceptive as it takes a skilled hand to balance its creamy texture without curdling the eggs. Here are nine places widely regarded by locals for serving the best Carbonara in Rome:

1.Roscioli – A delicatessen and restaurant near Campo de’ Fiori that is well respected for its meticulous selection of ingredients and their traditional Carbonara which is rich and smooth.

2.Da Enzo al 29 – Situated in Trastevere, this trattoria is small and usually requires a reservation. Traditional Roman cuisine shines here with their Carbonara being exceptionally creamy with perfectly rendered guanciale.

3.Trattoria Luzzi – Near the Colosseum, Trattoria Luzzi offers an authentic Roman ambiance with reasonably priced dishes. Their Carbonara is known for having just the right balance of cheese and pepper.

4.La Carbonara – Located in Piazza Campo de’ Fiori, this restaurant opened in 1906 and can be considered an institution when it comes to the dish it’s named after.

5.Osteria Bonelli – In the Torpignattara neighborhood, Osteria Bonelli serves a no-frills but delicious Carbonara that boasts of a loyal local following despite its off-center location.

6.Flavio al Velavevodetto – Found in Testaccio which is often referred to as the heart of traditional Roman cuisine. They use only top-quality ingredients resulting in a memorable Carbonara experience.

7.Pasta Chef Monti – This street food spot in Rione Monti offers a fantastic grab-and-go Carbonara made with precision and passion.

8.Arcangelo – Chef Arcangelo Dandini takes pride in his classic Roman dishes at his restaurant located in Prati district, including an exquisite version of Carbonara with a secret twist.

9.Trattoria Da Danilo – A family-run establishment where making pasta is an art form. Their Carbonara served in a cheese basket is not only scrumptious but also visually stunning.

For anyone visiting Rome, sampling Carbonara at any of these locales will offer an authentic taste of this simple yet sophisticated dish that so perfectly encapsulates the culinary soul of Rome.
