The Best Cut Of Steak For The Tastiest Beef Wellington

Beef Wellington is a gourmet dish that has graced the tables of fine dining restaurants and home kitchens alike – a decadent meal composed of a juicy steak coated with duxelles and pâté, all wrapped in a crisp pastry shell. But what truly elevates a Beef Wellington is using the perfect cut of steak, which is key to achieving that melt-in-the-mouth experience that diners seek.

The classic and arguably best cut for Beef Wellington is the beef tenderloin, also known as filet mignon when cut into steaks. This is the most tender part of the cow, as the muscles from this area do relatively less work than others, resulting in a softer texture. Tenderloin’s fine-grained texture and lean profile allow it to cook evenly within its puff pastry wrapping without becoming tough or drying out.

To ensure an exquisite Beef Wellington, use a center-cut tenderloin – ideally, the Chateaubriand portion, which lies at the thicker end of the tenderloin.
