6 Ways to Roast Tomatillos

Roasting tomatillos is a traditional and effective method of transforming these small, green, and sour Mexican fruits into a delectable ingredient full of flavor. There are several ways to roast tomatillos, and in this article, we’ll cover six methods to help you achieve those bold, smoky flavors that will elevate your dishes.

1. Oven Roasting

Preheat your oven to 425°F (220°C). Remove the husks from the tomatillos and rinse them thoroughly. Place the tomatillos on a baking sheet lined with foil or parchment paper. Roast for 20-30 minutes, turning them halfway through until they are soft and slightly charred. This method brings out a mild sweetness, making it perfect for salsas or stews.

2. Pan-Roasting

Heat a large skillet or frying pan over medium-high heat. Once hot, add husk-free and rinsed tomatillos directly into the pan without any oil or butter. Cook for about 5 minutes on each side, or until evenly charred and softened. This fast and easy technique offers an intense smoky flavor that pairs well with grilled meats.

3. Broiler Roasting

Set your broiler to high and position an oven rack about 6 inches below the heat source. Arrange prepared tomatillos on a foil-lined baking sheet. Broil for 5-10 minutes on each side, until the skin is charred and blistered. This method imparts a nice balance of roasted flavor and tanginess, perfect for enchilada sauce or chili.

4. Grill Roasting

Fire up your grill to medium-high heat. Skewer the prepared tomatillos (you can also use a grill basket) and grill them for about 3-4 minutes per side, until charred and tender. The grill enhances the natural smokiness of the tomatillo, making this method ideal for outdoor barbecues and summery dishes.

5. Slow Cooker Roasting

Although not a traditional method, slow cooker roasting is a hands-off approach that offers delicious results. Place husked and cleaned tomatillos in a slow cooker along with desired herbs and spices. Cook on low for 4-6 hours or high for 2-3 hours, until the tomatillos are tender and have released their juices. Blend or mash the tomatillos to make a versatile sauce or base for soups.

6. Air Fryer Roasting

Preheat your air fryer to 400°F (200°C). Arrange prepared tomatillos in a single layer in the air fryer basket, with space between them for proper airflow. Fry for 8-10 minutes or until slightly charred and softened, shaking the basket halfway through. This modern twist on roasting is quick and fuss-free while still delivering great flavor.

In summary, roasting tomatillos can be done using various methods, each offering unique results that enhance your Mexican dishes. Choose the technique that suits your taste preferences or has available equipment to unlock bold and tantalizing flavors in your homemade salsas, sauces, soups, and stews.
