6 Ways to Cook Squash

1. Roasting

One of the simplest and most popular ways to cook squash is by roasting it. To do this, preheat your oven to 400°F (200°C). Cut the squash in half lengthwise and remove the seeds with a spoon. Drizzle the squash halves with olive oil, season with salt and pepper, and place them cut-side down on a baking sheet lined with parchment paper. Roast for 30-45 minutes or until tender. Roasted squash can be served as a side dish, added to salads, or used as an ingredient in soups or stews.

2. Grilling

Grilling brings out the natural sweetness of squash while giving it a pleasant smoky flavor. To grill squash, thinly slice it into ½-inch thick rounds or wedges, brush with olive oil, and sprinkle with salt and pepper. Cook over medium heat on your grill or grill pan until tender and slightly charred, about 3-5 minutes per side depending on thickness. Serve grilled squash as a side dish or add it to your favorite couscous, quinoa, or pasta dishes.

3. Steaming

Steaming is a healthy way to cook squash without adding any additional fat or oil. First, cut the squash into evenly-sized pieces (either cubes or slices) so that they cook evenly. Place the pieces into a steamer basket over boiling water, cover, and steam for about 8 minutes for cubed squash or 5 minutes for sliced squash – until tender but firm. Steamed squash can be pureed for baby food, used in baking recipes as a substitute for fats, or served simply with a pat of butter and dash of salt.

4. Boiling

Boiling may seem like a less-exciting cooking method compared to others on this list, but it results in soft, flavorful squash perfect for soups or mashes made from winter squash varieties. Simply peel and cube the squash and place it in a large pot of salted water. Bring to a boil, reduce the heat, and let it simmer for 15-20 minutes until the squash is easily pierced with a fork. Drain and use as desired.

5. Sautéing

Sautéing is an excellent way to cook tender summer squashes quickly while retaining their bright, fresh flavor. Cut zucchini or yellow squash into thin rounds or bite-sized pieces, then heat some olive oil or butter in a skillet over medium-high heat. Add the squash and cook, stirring occasionally, until tender and lightly browned, about 5-7 minutes. Season with your choice of herbs and spices, and serve as a side dish or incorporate into stir-fries.

6. Microwaving

If you’re pressed for time, microwaving is the answer for cooking squash without sacrificing flavor. Cut the squash into evenly-sized pieces (cubed or sliced) and place them in a microwave-safe dish with a couple of tablespoons of water to create steam. Cover the dish with a microwave-safe lid or plate and cook on high power for 3-5 minutes until tender. Microwaved squash can be enjoyed on its own or combined with other dishes.
