6 Ways to Cook Kohlrabi

Introduction

Kohlrabi, a lesser-known vegetable belonging to the Brassica family, is a versatile and nutritious root vegetable that deserves more recognition in our kitchens. Its mild flavor and crisp texture make it suitable for a wide variety of dishes. This article will introduce you to six delicious ways to cook kohlrabi.

1. Roasted Kohlrabi

One of the simplest ways to cook kohlrabi is by roasting it. Preheat your oven to 400°F (200°C). Peel and cut the kohlrabi into wedges or cube-shaped pieces, toss them in olive oil, salt, and pepper, then spread evenly on a baking sheet lined with parchment paper. Roast for 30-40 minutes or until tender and slightly browned.

2. Kohlrabi Fries

For a healthier alternative to traditional potato fries, try making kohlrabi fries instead. Peel the kohlrabi, cut into long strips, and toss with olive oil, salt, pepper, and your choice of herbs or spices. Bake at 425°F (220°C) for 25-30 minutes on a lined baking sheet, flipping halfway through for even cooking. Serve with your favorite dipping sauce.

3. Kohlrabi Gratin

A creamy kohlrabi gratin is an indulgent way to enjoy this root vegetable. Layer thinly sliced kohlrabi in a greased baking dish with chopped onions and grated cheese of your choice between each layer. Pour over a mixture of whipping cream and chicken or vegetable broth, then sprinkle more cheese on top. Bake at 375°F (190°C) for 45-50 minutes until bubbly and golden brown.

4. Sautéed Kohlrabi

Sautéing brings out the natural sweetness of kohlrabi. Melt 2 tbsp of butter in a large pan over medium heat, then add thinly sliced kohlrabi and cook until tender and lightly browned, about 5-7 minutes. Add minced garlic and your choice of herbs or spices (such as thyme or rosemary) during the last minute of cooking. Finish with a squeeze of fresh lemon juice and season to taste with salt and pepper.

5. Kohlrabi in Soups and Stews

Kohlrabi can be added to soups and stews like any other root vegetable. It maintains its texture well during the cooking process, making it the perfect addition to dishes like minestrone, chicken noodle soup, or potato chowder. Simply peel and chop the kohlrabi into bite-sized pieces before adding to your soup or stew recipe.

6. Raw Kohlrabi Salad

For a refreshing salad, combine grated kohlrabi with shredded carrots, apple slices, raisins or dried cranberries, chopped nuts (such as walnuts or almonds), chopped parsley, and a simple dressing made from lemon juice, olive oil, salt, pepper, and honey. Toss well to combine and let the flavors meld for at least 30 minutes before serving.
