4 Ways to Eat Pumpkin Seeds

Pumpkin seeds, also known as pepitas, are a healthy and delicious snack packed with nutrients such as magnesium, zinc, and protein. They are versatile and can be used in various recipes or eaten on their own. In this article, we will explore four ways to enjoy pumpkin seeds.

1. Roasted Pumpkin Seeds

Roasting pumpkin seeds is one of the most popular ways to enjoy them. To roast pumpkin seeds, preheat your oven to 350°F (180°C). Clean the seeds by removing any pumpkin residue and rinse them under cold water. Pat dry with a paper towel and then toss them with a little olive oil and your choice of seasonings such as salt, pepper, garlic powder, or paprika. Spread the seasoned seeds on a baking sheet in a single layer and bake for 20-25 minutes or until golden brown. Make sure to stir the seeds every 10 minutes for even roasting.

2. Pumpkin Seed Butter

Pumpkin seed butter is a great alternative to peanut or almond butter and is easy to make at home. To make pumpkin seed butter, roast 2 cups of shelled pumpkin seeds according to the method described above. Once cooled, transfer the roasted seeds to a food processor or high-powered blender along with a pinch of salt. Blend until smooth, stopping occasionally to scrape down the sides of the blender. This may take several minutes depending on the power of your blender. Optionally, you can add honey or maple syrup for added sweetness.

3. In Salads or Grain Bowls

Adding pumpkin seeds to your salads or grain bowls not only adds a delicious nutty flavor but also provides an extra crunch that can elevate any dish. Simply toss a handful of roasted pumpkin seeds into your salad mix or sprinkle some over your favorite grain bowl – whether it’s quinoa, rice, or couscous – for added texture and nutrients.

4. Homemade Granola

Pumpkin seeds can be used in homemade granola recipes, making a tasty and nutritious breakfast option. To make pumpkin seed granola, combine 2 cups of rolled oats, 1 cup of roughly chopped nuts (such as almonds or walnuts), and 1/2 cup of pumpkin seeds in a bowl. In a separate bowl, mix together 1/3 cup of honey or maple syrup, 1/4 cup of melted coconut oil, and a pinch of salt. Pour the wet ingredients over the dry ingredients and mix well to coat. Spread the mixture on a lined baking sheet and bake at 325°F (160°C) for 20-25 minutes or until golden brown, stirring halfway through.

In conclusion, pumpkin seeds are not only healthy but can also be enjoyed in various ways. Whether you munch on them as a roasted snack, blend them into a seed butter, toss them into salads and grain bowls, or incorporate them into your homemade granola – the possibilities with pumpkin seeds are endless!
