The Best Ground Chicken Meatloaf

Ground chicken meatloaf is a leaner twist on the traditional meatloaf that’s just as delicious and comforting. A staple in American kitchens, the classic meatloaf gets a healthy makeover when ground chicken replaces beef, resulting in a lighter yet still satisfying meal.

One of the best things about using ground chicken is that it absorbs flavors wonderfully, giving cooks the flexibility to experiment with various herbs, spices, and additions to create a masterpiece that’s unique to their taste. Below is a carefully crafted recipe for the best ground chicken meatloaf designed to delight your taste buds and offer a nutritious alternative to heavier meat dishes.

Ingredients:

– 2 pounds of ground chicken

– 1 cup of breadcrumbs

– 1/2 cup of milk

– 1 small onion, finely chopped

– 1 carrot, grated

– 1/4 cup of fresh parsley, finely chopped

– 2 garlic cloves, minced

– 1 large egg

– 2 tablespoons of Worcestershire sauce

– 1 teaspoon of dried thyme

– Salt and pepper to taste

For the Glaze:

– 1/2 cup of ketchup

– 2 tablespoons of brown sugar

– 1 tablespoon of apple cider vinegar

Instructions:

1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).

2. In a large bowl, soak the breadcrumbs in milk for a few minutes until they are fully absorbed.

3. Add the ground chicken to the breadcrumb mixture along with the onion, carrot, parsley, garlic, egg, Worcestershire sauce, thyme, salt, and pepper. Mix well until all ingredients are evenly distributed but try not to overmix as this can make the loaf tough.

4. On a parchment-lined baking sheet or loaf pan, shape the mixture into a loaf shape. If you prefer individual portions make mini loaves; adjust cooking time accordingly.

5. Make the glaze by mixing together ketchup, brown sugar, and apple cider vinegar in a small bowl until well combined.

6. Brush half of the glaze onto the chicken meatloaf before baking. Reserve the rest for later.

7. Bake in preheated oven for approximately 50 minutes or until an internal temperature reads 165 degrees Fahrenheit (74 degrees Celsius).

8. Halfway through baking, apply another coat of glaze over the loaf for added flavor and moisture.

9. Once baked through, remove from oven and let it rest for about ten minutes before slicing. This resting period allows juices to redistribute throughout the meatloaf.

10. Serve this delectable ground chicken meatloaf with sides like mashed potatoes and steamed vegetables or enjoy it as is.

Ground chicken meatloaf not only offers up all the comfort of classic meatloaf but also represents an excellent option for those looking to cut down on red meat consumption without sacrificing flavor or texture.
