How to Store Royal Icing: 13 Steps

Creating beautiful and intricate designs on cakes and cookies can be done easily using royal icing. However, understanding how to store royal icing correctly is essential in maintaining the ideal consistency and texture for your next project. Follow these 13 steps to ensure your royal icing stays perfectly preserved.

1. Whip up your royal icing: Begin by mixing powdered sugar, meringue powder, and water to create a smooth and thick consistency. You can also add a couple of drops of food coloring if desired.

2. Check the consistency: Your icing should be smooth and ribbon-like when drizzled back into the bowl. Adjust the mixture if needed by adding more powdered sugar or water.

3. Use a spatula to clean the edges of your mixing bowl, ensuring that all icing is combined well.

4. Split the icing into smaller portions: If you plan on using different colors for your designs, divide the icing into equal portions and tint each one accordingly.

5. Place plastic wrap directly onto the surface of each bowl of icing: This will prevent a hard crust from forming on top of your royal icing.

6. Seal the bowls with airtight lids or plastic wrap: Ensure there is no air inside to prevent premature drying or unwanted crusting.

7. Store at room temperature: Keep the bowls of royal icing away from direct sunlight or significant temperature fluctuations in a cool, dry place.

8. Bear in mind that royal icing can be stored for up to two weeks at room temperature if properly preserved; however, its consistency may change over time.

9. Label the containers with dates: Clearly mark when you made the royal icing to track its freshness accurately.

10. For long-term storage, transfer your royal icing into an airtight, freezer-safe container.

11. Freeze the containers for up to three months; however, remember that freezing can alter the consistency and texture once thawed.

12. Thaw frozen royal icing at room temperature: Leave the container on the counter for several hours until it reaches room temperature.

13. Whip the icing before using it again: After the royal icing is thawed, give it a good mix with a spatula or hand mixer to smooth out any separations that may have occurred during storage.

Following these steps will ensure your royal icing remains in perfect condition, ready to turn your baked creations into magnificent works of edible art.
