How to Preserve Beetroot: 12 Steps

Beetroot is a nutritious and versatile vegetable that can be enjoyed in various dishes. However, if you want to preserve its freshness and taste for a longer time, follow these simple steps to store it efficiently:

1. Harvest or purchase fresh beetroots with healthy leaves and firm roots.

2. Rinse the beetroot thoroughly under cool running water to remove any dirt or debris.

3. Cut the leaves and stalks, leaving about 2 inches of stem attached to the root. This prevents bleeding of the beetroot during storage or preparation.

4. Dry the beetroots using a clean kitchen towel or paper towels, making sure there’s no excess moisture on the surface.

5. Store fresh beetroots in a cool and dark place like a basement, pantry, or root cellar, ideally at temperatures between 32°F and 40°F (0°C – 4°C). At this temperature range, they can last for up to four months.

6. Use perforated plastic bags or containers with vents for storage to allow air circulation, which minimizes molding and spoilage.

7. Regularly check your beetroots for signs of spoilage like mold, softening, or unpleasant smells.

8. For extended storage, consider canning your beetroots by boiling them until tender, then peeling and placing them in sterilized jars with brine before sealing the jars in a hot water bath.

9. Freezing is another option for preserving beetroot. You’ll need to blanch the roots first by boiling them for three minutes and submerging them in ice water immediately afterward before packing into freezer bags or containers.

10. Dehydrating is another effective method to preserve beetroot. Slice the clean beetroot into thin slices (¼ inch thickness), place them on dehydrator trays, and follow your dehydrator’s instructions for the drying process.

11. Pickling beetroot requires boiling the roots until tender, peeling them, and slicing into chunks or slices before placing in sterilized jars with a vinegar brine with spices, herbs, or aromatics of your choice.

12. For short-term preservation, refrigerate cooked beetroot in airtight containers for up to a week.

By following these 12 steps, you can preserve your beetroot to enjoy its delicious taste and nutritional benefits all year round. Choose the method that suits you best, and don’t hesitate to get creative with your dishes!
