Pickling onions is a great way to add a burst of flavor to your meals and create a delicious homemade condiment. This easy-to-follow guide will walk you through the process of pickling onions, from choosing the right onions and preparing them to seasoning and sealing the jars.

Step 1: Gather Your Ingredients

To pickle onions, you’ll need the following ingredients:

– Small onions (pickling or pearl onions work best)

– Vinegar (white, apple cider, or malt)

– Sugar

– Salt

– Pickling spices (available in grocery stores or make your own blend)

– Fresh herbs (optional)

Step 2: Choose the Right Onions

Select small, firm onions with no signs of mold or damage. They should be unblemished and have tight, dry skins.

Step 3: Prepare the Onions

Peel the onion skins by blanching them in boiling water for a minute and then transferring them into an ice bath. The skins should come off easily.

Step 4: Boil the Vinegar

In a saucepan, combine the vinegar, sugar, salt, and pickling spices. Bring to a boil, then remove from heat.

Step 5: Sterilize Jars and Lids

Before packing your onions, wash jars and lids in hot soapy water. Then sterilize them by boiling for 10 minutes or placing in an oven at 250°F for about 20 minutes.

Step 6: Pack the Onions

Tightly pack your peeled onions into the sterilized jars. Leave around a half-inch of headspace at the top of each jar.

Step 7: Add Herbs (Optional)

You can add some fresh herbs like dill or thyme to enhance the flavor of your pickled onions.

Step 8: Pour Vinegar Mixture

Pour the hot vinegar mixture over the onions, making sure they are fully submerged. Leave a quarter-inch of headspace at the top of each jar.

Step 9: Remove Air Bubbles

Using a non-metallic spatula, slide around the sides of the jar to release any trapped air bubbles.

Step 10: Seal the Jars

Wipe the rims of the jars clean, then place the lids on top and screw on the rings. Finger-tighten until secure but not overly tight.

Step 11: Store and Enjoy

Allow your pickled onions to cool to room temperature, then store them in a cool, dark place for at least two weeks before opening to let the flavors develop. Once opened, store in the refrigerator for up to six months.

Now that you know how to pickle onions in 11 simple steps, you can enjoy a delicious and flavorful condiment that complements any meal. Happy pickling!
