How to Make Freeze Dried Ice Cream

Introduction:

Freeze dried ice cream, often known as astronaut ice cream, is a lightweight, shelf-stable, and delicious treat that’s perfect for camping trips, emergency kits, or simply snacking at home. This creamy, dehydrated delight may seem like a high-tech invention, but you can actually make it in your own kitchen with a few simple tools. In this article, we’ll guide you through the process of making your very own freeze dried ice cream.

Ingredients:

– 1 pint of your favorite ice cream

– Parchment paper or silicone mat

– Baking sheet

– Freeze dryer

Step 1: Prepare the Ice Cream

Start by choosing your favorite flavor of ice cream. You’ll need at least one pint to make a good amount of freeze dried ice cream. Let the ice cream soften at room temperature for about 10 to 15 minutes until it’s slightly soft but not completely melted.

Step 2: Spread the Ice Cream

Line a baking sheet with parchment paper or a silicone mat to prevent sticking. Use a spoon, spatula, or ice cream scoop to spread the softened ice cream evenly onto the prepared sheet. Aim for a thickness of about half an inch. This will allow for even and efficient freeze drying. Once you have an even layer, place the tray in the freezer for at least an hour to refreeze and firm up.

Step 3: Freeze Dry the Ice Cream

A freeze dryer is essential for this step. If you do not own one already, consider investing in one as they’re useful for various food preservation projects.

Place your frozen tray of ice cream into the freeze dryer and follow the manufacturer’s instructions for use. Typically, this process will take around 24 hours to complete, so be prepared to wait. During this time, the machine will rapidly freeze the ice cream and then create a vacuum, which causes the ice cream’s moisture to evaporate, creating that unique freeze made texture.

Step 4: Enjoy Your Freeze Dried Ice Cream

Once the freeze drying process is complete, remove the tray from the freeze dryer and break the ice cream into bite-sized pieces. Store the finished product in an airtight container or resealable plastic bag to maintain its crispness and prevent moisture from re-entering.
