How to Make Bread Flour: 10 Steps

Baking the perfect bread starts with choosing the right flour. Bread flour is a staple ingredient in several bread recipes because of its high protein content, which gives the dough its elasticity and strength. If you find yourself without bread flour in your pantry, worry not! In this article, we’ll walk you through 10 steps on how to make your own bread flour at home. So let’s dive in.

1. Gather your materials: To make bread flour, all you need are two main ingredients — all-purpose flour and vital wheat gluten — and a kitchen scale or measuring cups for accuracy.

2. Calculate the right proportions: Bread flour has a higher protein content compared to all-purpose flour. To mimic this, you’ll generally want to combine 1 cup of all-purpose flour with 1 to 2 tablespoons of vital wheat gluten.

3. Measure out the all-purpose flour: Use your kitchen scale or measuring cups to measure the desired amount of all-purpose flour into a large bowl.

4. Measure the vital wheat gluten: Next, measure out the appropriate quantity of vital wheat gluten based on the amount of all-purpose flour used. For example, if you’re using 1 cup (120 grams) of all-purpose flour, add about 1 to 2 tablespoons (10-15 grams) of vital wheat gluten.

5. Blend ingredients thoroughly: To ensure an even distribution of vital wheat gluten throughout the mixture, combine the two ingredients by whisking them together or using a fork to blend them.

6. Mix well: Keep mixing until you achieve a uniform consistency, ensuring there are no clumps of vital wheat gluten left in the flour mixture.

7. Sieve if necessary: If your mixture appears lumpy or uneven, consider passing it through a fine-mesh sieve for a smoother texture.

8. Store your homemade bread flour: Once you’ve blended everything together, transfer the homemade bread flour to an airtight container or plastic resealable bag for safekeeping.

9. Label your containers: Don’t forget to label your homemade bread flour with the date you made it. This will help you keep track of when they’re made and how old they are.

10. Use it for your favorite bread recipes: Now that you have homemade bread flour, feel free to use it in your favorite recipes that call for bread flour. Enjoy the fruits of your labor as you bake delicious loaves, rolls, and other baked goods.
