How to Make a Baked Cheesecake

Introduction

Baked cheesecake is a classic dessert that combines the rich and velvety smooth texture of cream cheese with the sweet and tangy flavors of a fruit topping. This indulgent treat can be prepared at home with just a few simple ingredients and some essential kitchen tools. Follow this step-by-step guide on how to make a baked cheesecake, and you’ll have a showstopper dessert that’s perfect for any occasion.

Ingredients

For the crust:

– 1 1/2 cups graham cracker crumbs or digestive biscuits

– 1/4 cup granulated sugar

– 1/2 cup unsalted butter, melted

For the filling:

– 24 ounces (680g) cream cheese, softened

– 1 cup granulated sugar

– 1 tsp vanilla extract

– 3 large eggs

– 1 cup sour cream

Optional toppings:

– Fresh fruits such as strawberries, blueberries, or raspberries

– Fruit compote

– Caramel or chocolate sauce

Instructions

1. Preheat your oven to 325°F (160°C). Grease a 9-inch (23cm) springform pan and set aside.

2. Prepare the crust: In a medium-sized mixing bowl, combine the graham cracker crumbs or crushed digestive biscuits with sugar and melted butter. Mix well until evenly combined. Press the mixture firmly into the bottom of your greased springform pan.

3. Bake the crust for about 10 minutes, then remove it from the oven and let it cool while you work on your cheesecake filling.

4. In a large mixing bowl or stand mixer, beat together softened cream cheese, sugar, and vanilla extract until smooth and creamy. Make sure there are no lumps remaining — this may take a few minutes of mixing.

5. Add the eggs to the cream cheese mixture, one at a time, making sure to mix well after each addition. It’s essential to incorporate the eggs fully but avoid over-mixing to prevent excess air from getting trapped in the batter.

6. Stir in the sour cream and mix until your mixture is smooth and homogenous.

7. Pour the cheesecake filling over your cooled crust and tap gently on the counter to remove any air bubbles.

8. Bake your cheesecake in the preheated oven for approximately 45-55 minutes or until the edges are set but still have a slight jiggle in the center.

9. Turn off your oven but leave your cheesecake inside with the door slightly cracked for an hour. This gradual change in temperature prevents cracks from forming on the surface of your cheesecake.

10. Once cooled, remove your cheesecake from the oven, then cover and refrigerate it for at least four hours or ideally overnight to allow it to set.

11. Before serving, carefully remove your cheesecake from the springform pan, then top it with fruit, compote, or any desired sauce.
