How to Cook Smoked Gammon

Introduction

Smoked gammon is a popular dish that brings together the flavors of smoke and cured meat, resulting in a tender, juicy, and flavorsome meal. Gammon, which is derived from the hind leg of a pig, is salt-cured and smoked to produce a distinctive taste. In this article, we guide you through the process of cooking smoked gammon to perfection.

1. Choose your smoked gammon

When selecting smoked gammon, choose a high-quality piece from a trusted butcher or supplier. The meat should have a deep pink color and a firm texture.

2. Prepare the gammon

Before cooking, make sure to soak the smoked gammon in cold water for at least 6-8 hours or overnight to remove excess salt. Change the water at least once during this process.

3. Boil the gammon

Place your soaked gammon in a large pot filled with enough cold water to fully cover it. Add flavorings like bay leaves, peppercorns, onions, and cloves. Bring the water to a boil, then reduce heat and let it simmer for 20 minutes per pound (454 grams), plus an additional 20 minutes for thorough cooking. Use a digital meat thermometer to ensure that the internal temperature reaches 160°F (71°C).

4. Preheat your oven

While your smoked gammon is boiling, preheat your oven to 375°F (190°C).

5. Prepare the glaze

For added flavor and sweetness, create a glaze by mixing together brown sugar, honey, mustard, and apple juice or cider in a saucepan over low heat. Adjust proportions according to your taste preference.

6. Glazing and roasting

Once the gammon has finished boiling, gently remove it from the pot and place it onto an oven-safe rack set over a roasting pan. Remove the rind (the outer skin) to expose the fat layer. Score the fat diagonally in a crisscross pattern and brush half of the prepared glaze over it.

Place your gammon into the preheated oven and roast for 10 minutes. After that, baste with the remaining glaze and continue to roast for another 10-20 minutes, or until the fat is caramelized and golden brown.

7. Rest and serve

Allow your smoked gammon to rest for 10-15 minutes before carving into thin slices. Serve with a choice of sides such as roasted vegetables, creamy mashed potatoes, buttered peas, or a fresh green salad. Pair your meal with some tangy applesauce or whole-grain mustard to bring out the smoky flavor.
