How to Cook Sinigang na Baboy

Sinigang na Baboy, a popular Filipino dish, is a flavorful and tangy pork soup that combines the perfect balance of sourness and savoryflavors. This hearty dish is guaranteed to satisfy your cravings for comfort food. In this article, we’ll guide you through the process of cooking Sinigang na Baboy from scratch.

Ingredients:

– 1 ½ pounds of pork, cut into 2-inch cubes

– 1 large onion, quartered

– 2 large tomatoes, quartered

– ½ cup tamarind or sampalok (can also use tamarind mix)

– 6 cups of water

– 2 cups of kangkong (water spinach) or regular spinach

– 2 cups of sitaw (long beans) or green beans

– 6 pieces okra, cut into 2-inch lengths

– 2 pieces green long chili pepper (siling haba)

– ½ tablespoon fish sauce (patis), or to taste

– Salt and pepper, to taste

Instructions:

1. Prepare the ingredients: Pre-wash and chop all vegetables and set aside. Make sure your pork is cut into 2-inch cubes for easier cooking.

2. Cook the pork: In a large pot, add water and bring it to a boil. Add the pork cubes, lower the heat to medium, and let it simmer for about 30 minutes until the meat starts to soften.

3. Make the broth: After simmering the pork for 30 minutes, add onions and tomatoes to the pot. Cook for another 10 minutes until they become tender.

4. Add souring agent: Now it’s time to make this dish distinctly “sinigang” by adding its defining sour flavor. Take your tamarind fruit or pulp and soak it in a cup of hot water. Mash the tamarind and then strain it to extract the juice, discarding the seeds and fibers. Add the tamarind juice to the pot, or if you’re using a pre-mixed tamarind powder, add this instead.

5. Season with fish sauce: Stir in the fish sauce to taste. Salt and pepper can also be added at this stage to adjust flavor according to your preference.

6. Cook the vegetables: Begin adding vegetables to the pot, starting with those that take the longest to cook. Add green beans (sitaw) and okra first, and cook for 5 minutes or until almost tender. Then add kangkong (water spinach) or regular spinach and green chili peppers, cooking for an additional 2-3 minutes until wilted.

7. Finish it up: At this point, your delicious Sinigang na Baboy should be ready! Taste and adjust seasonings as desired, then ladle this aromatic dish into individual bowls.

8. Serve: Best enjoyed with a warm serving of steamed white rice and a dipping sauce made of fish sauce (patis) mixed with crushed garlic and chili pepper. Enjoy your hearty Sinigang na Baboy!
