How to Cook Picanha: 11 Steps

Picanha is a popular Brazilian cut of beef that comes from the rump cap. Known for its tenderness and flavor, it is often the star of many barbecues and gatherings. Cooking picanha can seem daunting, but with these 11 simple steps, you’ll be able to serve up a delicious meal everyone will enjoy.

1. Choose the right picanha: When selecting your picanha, look for a piece with good marbling and a thicker fat cap. This will ensure maximum flavor and tenderness in your final dish.

2. Prepare the meat: Trim any excess fat or silver skin from the picanha, but leave the thick fat cap intact as it adds flavor during cooking.

3. Cut into steaks or skewers: You can either cut the picanha into individual steaks or slice them into long strips and skewer them for a more traditional presentation.

4. Season well: Generously season your picanha with coarse salt, making sure all sides are covered evenly. The salt will help enhance the natural flavors of the meat.

5. Heat your grill or oven: Preheat your grill to high heat, or if cooking indoors, set your oven to broil.

6. Sear the meat: If grilling, place your picanha directly on the hottest part of the grill to create beautiful sear marks and lock in the juices. If using an oven broiler, place your picanha on a rack above a foil-lined baking sheet and sear both sides quickly under the broiler.

7. Reduce heat and continue cooking: Lower your grill’s temperature to medium heat or move your picanha to a lower rack in your oven to cook it more gently through to your desired doneness.

8. Check doneness with a thermometer:

– Rare: 120-125°F (49-51°C)

– Medium Rare: 130-135°F (54-57°C)

– Medium: 140-145°F (60-63°C)

– Medium Well: 150-155°F (66-68°C)

– Well Done: 160°F (71°C) or higher

9. Rest the meat: Allow your picanha to rest for at least 5 to 10 minutes before slicing. This will help retain its flavorful juices.

10. Slice against the grain: To ensure tenderness, slice your picanha against the grain into thin, even slices.

11. Serve and enjoy: Plate your picanha with traditional Brazilian sides like rice, beans, and farofa, or your favorite side dishes. Enjoy the succulent flavors of this amazing cut of beef!
