How to Cook Little Neck Clams: 11 Steps

Little neck clams are a delicious and versatile seafood option that can be prepared in a variety of ways. In this article, we will guide you through 11 simple steps on how to cook little neck clams to perfection. Whether you’re a beginner in the kitchen or an experienced chef, these steps will ensure your clams turn out tasty and tender.

Step 1: Choose Fresh Clams

When purchasing little neck clams, look for ones with tightly closed shells. Avoid any with cracked or damaged shells, and make sure they have a fresh, ocean smell.

Step 2: Rinse and Soak

Before cooking, rinse the clams under cold water to remove any dirt or sand. Then, soak them in a bowl of cold water with a pinch of salt for about 30 minutes – this helps them expel any remaining sand or debris.

Step 3: Discard Any Open Clams

After soaking, discard any clams that remain open even after tapping their shells gently against the counter. These are likely dead and unsafe to eat.

Step 4: Preheat Your Cooking Pot

Choose a large pot with a lid, and preheat it over medium heat.

Step 5: Prepare Aromatics

While the pot is heating, prepare your aromatics. Finely chop garlic and onions (or shallots), and gather your preferred herbs such as thyme, oregano, or parsley.

Step 6: Sauté Aromatics

Add some olive oil or butter to the preheated pot and sauté your aromatics until they become translucent.

Step 7: Add White Wine or Broth

Pour in about half a cup of white wine or broth (chicken or vegetable) to deglaze the pot. Let the liquid come to a boil and reduce slightly.

Step 8: Add Clams and Steam

Place the rinsed clams into the pot, making sure they are evenly distributed. Cover with a lid and steam for 7-9 minutes, or until all clams have fully opened.

Step 9: Discard Unopened Clams

Once the cooking time is complete, remove any clams that haven’t opened. These are unsafe to eat and should be discarded.

Step 10: Season and Serve

Season the clams and broth with salt, pepper, and freshly squeezed lemon juice. You can also add red pepper flakes for some spice. Garnish with chopped fresh parsley or another herb of your choice. Serve immediately with crusty bread for dipping into the flavorful broth.
