How to Cook BBQ Ribs: 7 Steps

Step 1: Choose Your Ribs
Start by selecting the right type of ribs for your barbecue. There are three main types: baby back ribs, spare ribs, and St. Louis style ribs. Baby back ribs are smaller and leaner, while spare ribs are larger and contain more meat. St. Louis style ribs are a trimmed version of spare ribs, making them more uniform in size.
Step 2: Prepare the Ribs
Remove the membrane from the back of the ribs, as this can make them tough to eat. Use a paper towel to get a good grip on the membrane and pull it off in one motion. Next, trim any excess fat from the ribs to ensure even cooking.
Step 3: Season the Ribs
Rub a generous amount of your favorite barbecue spice rub onto both sides of the ribs. Make sure to cover all surfaces for maximum flavor. You can either use a store-bought rub or make one yourself by combining various spices like paprika, brown sugar, garlic powder, onion powder, and cayenne pepper.
Step 4: Preheat Your Grill or Smoker
Preheat your grill or smoker according to its instructions and set it up for indirect cooking at a temperature between 225-250°F (107-121°C). Indirect cooking means placing the ribs away from the direct heat source.
Step 5: Smoke the Ribs
Place the seasoned ribs on the grill or smoker bone-side down, away from direct heat. Close the lid and let them cook for about 3-4 hours for baby back ribs or 5-6 hours for spare or St. Louis style ribs. Make sure to maintain a consistent temperature during this time.
Step 6: Apply BBQ Sauce
During the last hour of cooking, brush a layer of barbecue sauce onto both sides of the ribs every 20-30 minutes. This will create a delicious, sticky glaze on the ribs.
Step 7: Check for Doneness and Serve
Ribs are done when the meat has pulled back from the bone by about half an inch (1.3 cm) and is tender enough to pull apart easily. Use a meat thermometer to ensure they have reached an internal temperature of at least 190°F (88°C).
