How to Boil Lobsters: 12 Steps

1. Prepare your workspace: Clear your kitchen counter and organize all the tools you’ll need, such as a large pot, a pair of tongs, a cutting board, and a sharp knife. Make sure you have enough space to work efficiently and safely.

2. Choose fresh lobsters: Purchase live lobsters from a trusted source to ensure their freshness, and look for lively specimens that show signs of movement.

3. Store the lobsters: Before cooking, keep the lobsters in a cool and dark place until you’re ready to start the boiling process.

4. Fill the pot with water: Use a large pot that can comfortably hold all of your lobsters without overcrowding them. Fill it with about two-thirds of water and bring it to a rolling boil.

5. Add salt: Generously salt the boiling water to enhance the flavor of the lobsters. Use about 1/4 cup of salt for every gallon of water.

6. Grasp the lobster: Use a pair of tongs or your hands to hold the lobster firmly by its body, keeping its claws away from your fingers.

7. Immobilize the lobster: To minimize any pain or stress for the lobster, you can place it in the freezer for about 15 minutes before boiling. Alternatively, quickly pierce its head with a sharp knife behind its eyes in one swift motion.

8. Place the lobster in boiling water: Carefully lower each lobster headfirst into the boiling water so as not to splash yourself with hot water.

9. Determine cooking time: Calculate how long you’ll need to cook your lobsters based on their weight—generally speaking, cook them for about 8-10 minutes per pound (or about 2 pounds = 15-20 minutes).

10. Check for doneness: Look for bright red shells as an indicator that they are cooked. To be certain, use an instant-read thermometer to check the internal temperature of the lobster meat, which should reach 135-140°F (57-60°C).

11. Remove the lobsters: Carefully remove each lobster from the boiling water using tongs and transfer them to a tray or plate.

12. Serve immediately: For the best flavor and texture, serve your boiled lobsters immediately after they have cooled enough to handle. Dig in and enjoy!

By following these 12 steps, you’ll have perfectly-boiled, tender, and flavorful lobsters to share with family and friends. Bon appétit!
