How to Bake Nigerian Cake: 12 Steps

Introduction:

Nigerian cake, a delicious and mouth-watering treat, is a staple at many Nigerian celebrations, such as weddings, birthdays, and anniversaries. In this article, we will outline 12 simple steps to bake the perfect Nigerian cake at home. So grab your apron, and let’s get started!

Step 1: Gather your ingredients

For a tasty Nigerian cake, you will need the following ingredients:

– 500g unsalted butter, softened

– 2 cups granulated sugar

– 8 large eggs

– 4 cups all-purpose flour

– 2 teaspoons baking powder

– 1 teaspoon nutmeg

– 1 teaspoon vanilla extract

– Grated zest of one lemon or orange (optional)

– 1/2 cup whole milk

Step 2: Prepare your tools and workspace

Ensure that you have all the necessary baking tools, such as a mixing bowl, hand or stand mixer, measuring cups and spoons, spatula, whisk, square or round cake pan (preferably with a removable base), non-stick spray or parchment paper. Make sure to clean your workspace so that you have enough space to work comfortably.

Step 3: Preheat your oven

Preheat your oven to 350°F (180°C), allowing it to warm up while you prepare the batter.

Step 4: Grease and line the cake pan

Generously grease your cake pan using non-stick spray or butter. Then line the bottom of the pan with parchment paper for easy removal of the cake after baking.

Step 5: Cream the butter and sugar

Using an electric mixer or a wooden spoon mix the softened butter with sugar in a large bowl until they are well combined and fluffy.

Step 6: Add eggs one at a time

Crack the eggs one by one into the butter-sugar mixture, and mix well after each addition to fully incorporate.

Step 7: Sift dry ingredients

In a separate bowl, sift together the flour, baking powder, and nutmeg to give the cake a lighter texture.

Step 8: Add dry ingredients to wet mixture

Gradually add the sifted dry ingredients to the butter-sugar-egg mixture. Mix gently, ensuring not to overmix.

Step 9: Add flavorings

Pour in the vanilla extract and your choice of citrus zest. Gently mix to evenly distribute the flavors throughout the batter.

Step 10: Add milk

Pour in the milk and stir until well combined. The batter should have a smooth, pourable consistency.

Step 11: Pour batter into prepared cake pan

Carefully pour the batter into your greased and lined cake pan, smoothing out the top with a spatula.

Step 12: Bake and cool

Place the cake on a center rack in your preheated oven. Bake for approximately 45-55 minutes, or until a toothpick inserted into the middle comes out clean. Once done, allow the cake to cool for about 10 minutes in its pan before transferring to a wire rack to cool completely.
