When it comes to baking a carrot cake that truly stands out, the secret is all in the texture. While many recipes and professional bakers swear by the lightness of cake flour for creating tender baked goods, when it comes to carrot cake, using all-purpose flour can actually elevate your dessert to new heights.

The allure of cake flour lies in its finely milled texture and lower protein content which typically yields a softer, more delicate crumb. This might be perfect for angel food cakes or chiffon cakes, but carrot cake demands something different — a heartier crumb that can support the rich and moist ingredients that make this dessert so beloved.

All-purpose flour has a higher protein content compared to cake flour, usually around 10-13%, which means it can form more gluten.
