Ingredients:

– 8 oz angel hair pasta, cooked and chilled

– 1/2 cup cherry tomatoes, halved

– 1/2 cup chopped red onion

– 1/2 cup pitted Kalamata olives

– 1/2 cup fresh basil leaves, chopped or torn

– 1/2 cup mini mozzarella balls (bocconcini)

– 1 can (14 oz) marinated artichoke hearts, drained and quartered

– Salt and pepper, to taste

Dressing:

– 1/4 cup extra virgin olive oil

– 2 tablespoons freshly squeezed lemon juice

– 1 tablespoon red wine vinegar

– 1 tablespoon Dijon mustard

– 2 cloves minced garlic

– Salt and pepper, to taste

Instructions:

Step 1: Prepare the Pasta

Start by boiling the angel hair pasta according to the package instructions. Drain it carefully, then rinse it under cold water until completely cool. Set aside.

Step 2: Combine Ingredients

In a large bowl, combine the cooked angel hair pasta, cherry tomatoes, chopped red onion, Kalamata olives, fresh basil leaves, mini mozzarella balls (bocconcini), and marinated artichoke hearts. Toss gently to mix all ingredients evenly.

Step 3: Prepare the Dressing

To make the dressing, whisk together extra virgin olive oil, freshly squeezed lemon juice, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper in a small bowl until well combined.

Step 4: Dress the Salad

Pour the dressing over the salad and toss thoroughly to ensure all ingredients are coated evenly. Adjust salt and pepper according to taste.

Step 5: Chill and Serve

Cover the salad and refrigerate it for at least half an hour to let the flavors meld together. When you’re ready to serve, give the salad another toss, transfer it to a serving platter or individual plates, and enjoy!
