Best Keto Buckeye Brownies Recipe – How To Make Keto Buckeye Brownies

Are you on a keto diet but still craving for some delicious, chocolatey desserts? Fear not, we have the perfect recipe for you: Keto Buckeye Brownies! These low-carb, sugar-free treats will satisfy your sweet tooth without derailing your diet. This easy-to-make recipe will keep your taste buds happy and your waistline trim.

Ingredients:

For the Brownie Base:

– 1 cup almond flour

– 1/4 cup cocoa powder

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt

– 1/2 cup unsalted butter, melted

– 1 cup granulated erythritol or other keto-friendly sweetener

– 3 large eggs

– 1 teaspoon vanilla extract

For the Peanut Butter Layer:

– 3/4 cup natural peanut butter (no added sugar)

– 1/4 cup unsalted butter, softened

– 1/2 cup powdered erythritol or other keto-friendly sweetener

– 1 teaspoon vanilla extract

For the Chocolate Topping:

– 3/4 cup sugar-free chocolate chips

– 2 tablespoons unsalted butter

Instructions:

1. Preheat your oven to 350°F (180°C). Grease an 8″x8″ (20×20 cm) square baking pan and line with parchment paper with overhangs for easy removal; set aside.

2. In a medium bowl, combine almond flour, cocoa powder, baking powder, and salt; mix well and set aside.

3. In a separate large bowl, whisk together melted butter and granulated erythritol until smooth. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.

4. Gradually add dry ingredients into the wet ingredient mixture and stir until fully combined. Pour the batter into the prepared pan and spread evenly.

5. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Allow the brownies to cool completely in the pan.

6. For the peanut butter layer, in a bowl, mix together peanut butter and softened butter until creamy. Add powdered erythritol and vanilla extract, stirring until smooth. Spread the peanut butter mixture over cooled brownies.

7. In a small saucepan over low heat, melt sugar-free chocolate chips and butter, stirring until smooth. Pour melted chocolate over peanut butter layer and spread evenly.

8. Refrigerate for at least 1 hour or until chocolate topping is set. Lift brownies out of the pan using parchment paper overhangs, then cut into squares and serve.

These Keto Buckeye Brownies are perfect as a dessert or as an afternoon treat. They’re sure to become a favorite for anyone on a keto diet or just craving something sweet without all the carbs and sugar. Enjoy!
