Best Italian Ricotta Cookies Recipe – How To Make Ricotta Cookies

Introduction:

Italian Ricotta cookies are a classic, soft, and pillowy cookie that has its roots embedded in the Italian culture. These delightful cookies get their unique texture from the use of ricotta cheese. Perfect for any occasion, they are easy to make and adorned with a simple glaze and colorful sprinkles. This article will guide you through the steps to make these delicious cookies.

Ingredients:

For the Cookies:

– 2 cups all-purpose flour

– 1/2 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1 stick (1/2 cup) unsalted butter, softened

– 1 cup granulated sugar

– 1 egg

– 8 ounces whole milk ricotta cheese

– 2 teaspoons vanilla extract

For the Glaze:

– 2 cups powdered sugar

– 3 tablespoons milk

– 1/2 teaspoon vanilla extract

– Food coloring (optional)

– Colored sprinkles

Instructions:

1. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.

2. In a large bowl, mix the flour, baking powder, and baking soda together.

3. In another large bowl, cream the softened butter with the granulated sugar until light and fluffy using an electric mixer.

4. Add the egg, ricotta cheese, and vanilla extract to the butter mixture and mix on low speed just until combined.

5. Gradually add the dry ingredients (flour mixture) to the wet ingredients (butter mixture) while mixing on low speed until just combined. Do not overmix.

6. Using a scoop or spoon, drop cookie dough balls onto the prepared baking sheet about two inches apart.

7. Bake in preheated oven for approximately 12 to 15 minutes or until edges are lightly golden brown. Remove the cookies from the oven and let them cool for 2 to 3 minutes on the baking sheets before transferring them to wire racks to cool completely.

8. While the cookies cool, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth. You can add food coloring if you desire a colored glaze.

9. Once the cookies are completely cooled, dip the tops of each cookie into the glaze. Place them back on the wire rack and immediately decorate with colored sprinkles.

10. Allow the glaze to set before serving or storing in an airtight container for up to five days.
