A perfect dessert for any season, fruit tarts are a delightful way to showcase the vibrant colors and flavors of your favorite fruits while enjoying a delectable, flaky crust. Our best fruit tart recipe will guide you through the process of creating this delightful dessert that is sure to impress your friends and family.

Ingredients:

For the pastry crust:

– 1 ½ cups all-purpose flour

– ¾ cup unsalted butter, chilled and cubed

– ½ cup powdered sugar

– 1 large egg yolk

– Pinch of salt

For the custard filling:

– 2 cups whole milk

– ½ cup granulated sugar

– 3 large egg yolks

– ¼ cup cornstarch

– 1 tsp vanilla extract

For the fruit topping:

– Assorted fruits such as strawberries, blueberries, raspberries, kiwi, and mandarin oranges

– Apricot jam or clear glaze for brushing (optional)

Instructions:

1. Start by making the pastry crust. In a bowl or food processor, mix together flour, powdered sugar, and salt. Add in the cold butter cubes and incorporate until the mixture resembles coarse sand.

2. Add the egg yolk to the mixture and process it until it forms into a dough. Shape it into a disk, wrap it with plastic wrap, and chill in the refrigerator for at least one hour.

3. Preheat your oven to 350°F (180°C). Prepare a 9-inch tart pan with removable bottom by greasing it lightly.

4. Roll out the chilled dough on a floured surface into a circle that is about ¼-inch thick. Carefully transfer it to your prepared tart pan, pressing it gently into the bottom and sides of the pan. Trim any excess dough from around the edges.

5. Prick the bottom of the crust with a fork to prevent puffing while baking. Bake for 20-25 minutes, or until the crust is lightly golden brown. Allow it to cool completely.

6. To make the custard filling, heat milk in a saucepan over medium heat until it is steaming but not boiling. In a separate bowl, whisk together sugar, egg yolks, and cornstarch.

7. Slowly pour the hot milk into the egg yolk mixture while continuously whisking to prevent curdling. Once fully combined, pour the mixture back into the saucepan and cook on medium heat while consistently stirring until it thickens.

8. Remove from heat and stir in the vanilla extract. Pour custard through a fine-mesh sieve into a bowl, cover with plastic wrap touching the surface of the custard, and let it cool completely.

9. Once both the crust and custard have cooled, spread the filling evenly into the tart shell.

10. Arrange your chosen assorted fruits on top of the custard in an appealing pattern. Optionally, warm some apricot jam or clear glaze and gently brush it over the fruit for an added shine.

11. Refrigerate your fruit tart for at least four hours before serving to allow it to set properly. The dessert can be stored in the refrigerator for up to three days.

This fruit tart recipe combines a buttery crust with a creamy, rich custard filling that perfectly complements an array of colorful fruits, making this an elegant dessert suitable for any occasion. Enjoy!
