Best Chocolate Pots De Crème Recipe — How To Make Chocolate Pots De Crème

Introduction:

Chocolate Pots De Crème are a popular and delicious dessert that originated in France. They are known for their rich flavor, velvety smooth texture, and irresistible sweetness. In this article, we will guide you through a step-by-step process of making the best Chocolate Pots De Crème recipe that is sure to impress your family and friends.

Ingredients:

– 8 oz high-quality dark chocolate, chopped

– 1 1/2 cups heavy cream

– 1/2 cup whole milk

– 6 large egg yolks

– 1/3 cup granulated sugar

– 1/4 teaspoon salt

– Optional: Whipped cream and shaved chocolate for garnish

Instructions:

1. Prepare your ramekins or small dessert cups by lightly greasing them with butter or non-stick spray.

2. In a medium-sized saucepan, combine the heavy cream and whole milk over medium-low heat. Heat the mixture until it’s steaming but not boiling, around 180°F.

3. While your cream mixture heats, place the chopped dark chocolate in a heat-resistant bowl.

4. In another bowl, whisk together the egg yolks, granulated sugar, and salt until the mixture is smooth and slightly lightened in color.

5. Once the cream mixture is heated, pour about half of it over the chopped chocolate. Allow it to sit for a minute before whisking until smooth; this will help melt the chocolate evenly.

6. Slowly pour the remaining hot cream mixture into the egg yolk mixture while continuously whisking; this process is called tempering and prevents the eggs from cooking or curdling due to the heat.

7. Add the tempered egg yolk mixture back into your saucepan with the melted chocolate and gently warm the mixture over low heat. Stir continuously until the Pots De Crème base thickens and coats the back of a spoon, approximately 170°F. Be cautious not to overcook, as this can cause graininess in your dessert.

8. Strain the mixture through a sieve into a prepared pitcher or measuring cup with a pour spout, removing any solids or lumps.

9. Carefully pour the mixture into your prepared cups or ramekins, filling each nearly to the top.

10. Allow the filled cups to cool slightly before transferring them to the refrigerator. Refrigerate for at least 4 hours or preferably overnight, until set and chilled.

11. Serve your Chocolate Pots De Crème topped with whipped cream and shaved chocolate for garnish (if desired). Enjoy this decadent and delicious dessert!
