Ingredients:

– 4 boneless, skinless chicken breasts

– Salt and pepper, to taste

– 1 cup all-purpose flour

– 2 large eggs, beaten

– 1 cup seasoned breadcrumbs

– 1 cup grated parmesan cheese, divided

– 1/2 cup vegetable oil

– 2 cups marinara sauce

– 2 cups shredded mozzarella cheese

– 1 lb cooked pasta (spaghetti or any other preferred pasta)

– Fresh basil leaves, for garnishing (optional)

Instructions:

1. Preheat your oven to 400°F (200°C).

2. Season both sides of the chicken breasts generously with salt and pepper.

3. Set up a breading station by placing three shallow dishes next to each other. Add flour to the first dish, beaten eggs in the second, and combine breadcrumbs with 1/2 cup parmesan cheese in the third.

4. Dredge each chicken breast in flour, shaking off the excess. Then dip it into the beaten eggs and finally press into the breadcrumb mixture, ensuring full coverage.

5. In a large oven-safe skillet or frying pan, heat vegetable oil over medium-high heat. Carefully place breaded chicken breasts into the hot oil and cook for about 3-4 minutes per side until golden brown and crispy. Remove chicken from the pan and set aside.

6. Pour marinara sauce into the skillet and allow it to heat up briefly. Add cooked pasta and toss to coat entirely in the sauce.

7. Nestle breaded chicken breasts on top of the pasta, then top each piece of chicken with mozzarella cheese and the remaining 1/2 cup of grated parmesan cheese.

8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until cheese is melted and bubbly, and chicken is cooked through.

9. Remove from oven, allow it to cool for a minute or two, and serve hot, garnished with fresh basil leaves if desired. Enjoy your tasty Chicken Parmesan Pasta!

About Us

Since technology is not going anywhere and does more good than harm, adapting is the best course of action. That is where The Tech Edvocate comes in. We plan to cover the PreK-12 and Higher Education EdTech sectors and provide our readers with the latest news and opinion on the subject. From time to time, I will invite other voices to weigh in on important issues in EdTech. We hope to provide a well-rounded, multi-faceted look at the past, present, the future of EdTech in the US and internationally.

We started this journey back in June 2016, and we plan to continue it for many more years to come. I hope that you will join us in this discussion of the past, present and future of EdTech and lend your own insight to the issues that are discussed.
