Best Chicken Madras Curry Recipe – How to Make Homemade Chicken Madras

Chicken Madras is a popular South Indian curry dish that’s known for its rich flavor and irresistible aroma. This flavorful curry, made with tender chicken pieces cooked in a spicy tomato and coconut-based sauce, is sure to impress your taste buds and transport you to the heart of India. In this article, we will guide you through each step of making the best homemade Chicken Madras Curry recipe.

Ingredients:

– 1 kg boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

– 2 medium onions, finely chopped

– 2 large tomatoes, diced

– 1 cup coconut milk

– 3 tbsp vegetable oil

– 1/4 cup fresh coriander leaves, chopped (for garnish)

For the spice blend:

– 2 tsp ground coriander

– 1 tsp ground cumin

– 1 tsp ground turmeric

– 1/2 tsp cayenne pepper or red chili powder (adjust according to your preferred spice level)

– 1/4 tsp black pepper

– Salt to taste

For the curry paste:

– 6 garlic cloves, minced

– 2 inch ginger piece, grated or minced

– 2 green chilies, chopped (adjust as per your spice tolerance)

– 10 curry leaves

Instructions:

1. Prepare the spice blend by mixing all of the spices in a small bowl. Set aside.

2. Heat oil in a large pan over medium heat. Add onions and cook until they turn golden brown. This should take about 5 minutes.

3. Add garlic, ginger, green chilies, and curry leaves to the pan. Cook for another 2 minutes until fragrant.

4. Stir in the prepared spice blend and cook for a minute to allow the flavors to meld together.

5. Now add chicken pieces to the pan and increase the heat to medium-high. Cook for about 5-7 minutes, stirring occasionally to ensure the chicken is well-coated with the spices.

6. Add diced tomatoes and stir well. Cook for an additional 5 minutes, allowing the tomatoes to release their juices and create a thick sauce.

7. Pour in the coconut milk and stir until well combined. Lower the heat to medium-low and let the curry simmer for 20 minutes or until the chicken is cooked through and tender.

8. Taste-test the curry and adjust salt levels if needed.

9. Garnish with fresh coriander leaves and serve hot over basmati rice or with Indian bread, such as naan or roti.

With this simple recipe, you can now whip up an authentic Chicken Madras Curry in your very own kitchen!
