Best Ever Ceviche

Ingredients:
- 1 lb fresh white fish (such as sea bass or tilapia), diced
- 1 cup fresh lime juice
- 1/2 red onion, finely chopped
- 1 cup cherry tomatoes, quartered
- 1 jalapeño, seeded and minced
- 1/4 cup cilantro, chopped
- 1 avocado, diced
- Salt and pepper to taste
Instructions:
- Marinate fish in lime juice for 30 minutes
- Drain excess juice, leaving some for flavor
- Mix in remaining ingredients
- Chill for 15 minutes before serving
- Serve with tortilla chips or on tostadas
