If you’re a salad enthusiast on the lookout for a quick, delicious vegan twist to the classic Caesar dressing, then you’re in for a treat. The best vegan Caesar dressing doesn’t require elaborate ingredients or time-consuming procedures. In just 5 minutes, you can whip up a creamy, tangy, and utterly satisfying dressing that will elevate your salads to new heights.

Ingredients:

– 1/2 cup raw cashews (soaked for 2 hours if not using a high-speed blender)

– 1/4 cup water

– 2 tablespoons lemon juice

– 1 tablespoon olive oil

– 1 teaspoon capers

– 1 garlic clove

– 2 teaspoons Dijon mustard

– 1 teaspoon pure maple syrup or agave nectar

– 1 tablespoon nutritional yeast (for that cheesy flavor)

– Salt and pepper to taste

Instructions:

1. Start by gathering all your ingredients. If you haven’t pre-soaked your cashews and you’re not using a high-speed blender, boiling them for 10 minutes will soften them up quickly.

2. In a blender, combine the soaked cashews with water, lemon juice, olive oil, capers, and garlic. Blend these ingredients on high until smooth and creamy. You might need to scrape down the sides a couple of times to ensure everything is well incorporated.

3. Add in Dijon mustard, maple syrup (or agave), nutritional yeast, salt, and pepper. Blend again until all the ingredients are perfectly combined and the mix has a silky consistency.

4. Taste your dressing and adjust the seasoning if necessary. If the dressing appears too thick, add a little extra water by the tablespoon until it reaches your desired thickness.

5. Your vegan Caesar dressing is ready! Drizzle it over chopped romaine lettuce or your favorite salad greens.

This quick vegan Caesar dressing packs a flavorful punch and can be stored in an airtight container in the refrigerator for up to one week. Remember that this is more than just a dressing; it’s perfect as a dip or even as a spread for sandwiches and wraps.

Enjoy your deliciously creamy vegan Caesar dressing knowing it’s cruelty-free and full of nutrients!
