Fennel, with its distinctive licorice-like flavor and crunchy texture, is a versatile vegetable that adds a unique touch to various dishes. Packed with numerous health benefits, fennel provides an excellent source of fiber, vitamins, and antioxidants. If you’re looking for new ways to incorporate this flavorful veggie into your meals, here are three inspiring ideas to cook fennel:

1. Roasted Fennel

Roasting fennel helps to caramelize its natural sugars while enhancing its mild licorice flavor.

Ingredients:

– 2 medium fennel bulbs

– 2 tablespoons olive oil

– Salt and pepper to taste

Instructions:

1. Preheat the oven to 400°F (200°C).

2. Wash and trim the fennel bulbs, removing any stems and green fronds.

3. Slice the bulbs into 1/4-inch thick wedges.

4. In a large bowl, toss the fennel wedges with olive oil, salt, and pepper until evenly coated.

5. Spread out the fennel on a baking sheet lined with parchment paper.

6. Roast in the oven for 20-25 minutes or until tender and golden brown on edges.

7. Serve as a side dish or add cooked roasted fennel into salads or pasta dishes.

2. Braised Fennel

Braising fennel softens its texture while absorbing flavors from cooking liquids and spices.

Ingredients:

– 2 medium fennel bulbs

– 2 tablespoons unsalted butter

– 1 cup vegetable broth (or white wine)

– Salt and pepper to taste

– Fresh parsley or dill for garnish (optional)

Instructions:

7. Wash and trim the fennel bulbs, removing any stems and green fronds.

8. Slice the bulbs in half lengthwise.

9. In a large skillet with a lid, melt butter over medium heat.

10. Place the fennel in the skillet, cut side down, and cook for 4-5 minutes or until golden brown.

11. Flip the fennel and pour vegetable broth (or white wine) into the skillet.

12. Season with salt and pepper.

13. Cover and simmer over low heat for 20-25 minutes or until tender and liquid is mostly absorbed.

14. Garnish with freshly chopped parsley or dill if desired.

3. Fennel Gratin

Adding a layer of cheese and breadcrumbs turns fennel into a delicious, savory gratin dish perfect for dinner parties.

Ingredients:

– 2 medium fennel bulbs

– 1/2 cup grated Parmesan cheese

– 1/2 cup breadcrumbs

– 1/4 cup heavy cream

– 2 tablespoons unsalted butter

– Salt and pepper to taste

Instructions:

15. Preheat oven to 375°F (190°C).

16. Wash and trim the fennel bulbs, removing any stems and green fronds.

17. Cut each bulb into quarters lengthwise.

18. Boil the fennel quarters in salted water for about 8 minutes or until tender when pierced with a fork.

19. Drain well and place the cooked fennel quarters in a single layer in an ovenproof dish.

20. Pour heavy cream over the fennel and sprinkle a layer of breadcrumbs followed by grated Parmesan cheese on top.

21. Dot with small pieces of unsalted butter over the breadcrumb layer, then season with salt and pepper.

22. Bake in the oven for 20-25 minutes or until golden brown and bubbly on top.
