Rainbow Cake Recipe – How To Make A Rainbow Skittles Cake

If you are looking for a vibrant and delicious cake to celebrate a special occasion, look no further than this amazing Rainbow Skittles Cake. This cake not only looks impressive, but it also tastes absolutely delicious with its layers of colorful cake and delectable Skittles frosting. Follow these simple steps to create your very own eye-catching edible masterpiece.

Ingredients:

For the Cake:

– 2 cups all-purpose flour

– 3 teaspoons baking powder

– 1/2 teaspoon salt

– 1 cup unsalted butter, softened

– 2 cups granulated sugar

– 3 large eggs

– 1 teaspoon vanilla extract

– 1 cup whole milk

– Food coloring in six different colors (red, orange, yellow, green, blue, and purple)

– Skittles candies for decoration

For the Skittles Buttercream Frosting:

– 1 cup unsalted butter, softened

– 3 cups powdered sugar

– 1/4 cup Skittles-infused milk (see instructions below)

– 1 teaspoon vanilla extract

Instructions:

1. Preheat your oven to 350°F (180°C). Grease and line six round cake pans (8-inch) with parchment paper.

2. Sift the flour, baking powder, and salt together in a medium-sized mixing bowl. Set aside.

3. In a large mixing bowl or stand mixer fitted with the paddle attachment, cream together the softened butter and granulated sugar until light and fluffy.

4. Beat in the eggs one at a time into the butter mixture, making sure each egg is fully incorporated before adding the next one. Stir in the vanilla extract.

5. Add the dry ingredients alternately with the milk into the butter mixture, beginning and ending with the dry ingredients, and mixing well after each addition.

6. Evenly divide the cake batter into six bowls. Add a few drops of food coloring to each bowl, coloring each one red, orange, yellow, green, blue, and purple respectively. Mix well.

7. Pour the colored batter into the prepared cake pans. Smooth the top with a spatula and tap each pan on the counter to release any air bubbles.

8. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

9. While the cakes are cooling, prepare the frosting by beating together powdered sugar, softened butter, milk or heavy cream, and vanilla extract until smooth and creamy.

10. To assemble the cake, place the purple layer on a serving platter and spread a thin layer of frosting evenly on top. Repeat this process with the blue, green, yellow, orange, and red layers.

11. Once all layers are stacked and frosted together, cover the entire cake with a thin layer of frosting (a crumb coat) and refrigerate for 30 minutes to set.

12. Apply a final layer of frosting over the entire cake, making sure it is smooth and even.

13. Decorate with Skittles candies by pressing them gently onto the sides and top of the cake in a rainbow pattern or any other design you desire!

14. Serve your Rainbow Skittles Cake at room temperature for everyone to enjoy its delicious layers and colorful surprise!
