Introduction:

Antipasto salad is a delicious and colorful Italian appetizer that is perfect for any meal or gathering. Bursting with flavors, textures, and a sensational mix of cured meats, cheeses, olives, and marinated vegetables, it’s the perfect dish to impress your guests. In this article, we’ll explore the best antipasto salad recipe and how to make it at home!

Ingredients:

– 1/2 cup thinly sliced salami

– 1/2 cup chopped prosciutto

– 1/4 cup sliced pepperoni (optional)

– 1/2 cup cubed provolone cheese

– 1 cup cherry tomatoes, halved

– 1/2 cup sliced red onions

– 1 cup quartered artichoke hearts (canned or marinated)

– 1/2 cup pitted kalamata olives

– 1/2 cup marinated roasted red peppers, chopped

– 1/4 cup fresh basil leaves, chopped

– Salt and pepper to taste

For the dressing:

– 1/4 cup olive oil

– 3 tablespoons red wine vinegar

– 2 teaspoons Dijon mustard

– 1 garlic clove, minced

– Salt and pepper to taste

Instructions:

1. In a large mixing bowl, combine the salami, prosciutto, pepperoni (if using), provolone cheese, cherry tomatoes, red onions, artichoke hearts, kalamata olives, and roasted red peppers.

2. To make the dressing: In a small mixing bowl whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic clove until well combined. Season with salt and pepper to taste.

3. Drizzle the dressing over the salad ingredients in the large mixing bowl, tossing well to combine and ensure the dressing is evenly distributed.

4. Refrigerate the antipasto salad for at least 30 minutes to allow the flavors to meld together. This also helps the salad taste even better if made ahead of time, as the ingredients absorb the dressing and become more flavorful.

5. When ready to serve, add chopped basil leaves, salt, and pepper to taste. Toss one more time before transferring the antipasto salad to a serving platter or individual plates.

6. Serve chilled or at room temperature and enjoy!

Conclusion:

The best antipasto salad recipe is one that brings together all the fantastic flavors of Italy into a mouth-watering dish that is easy to create and customizable according to your tastes. It is a versatile starter, perfect for summer cookouts, dinner parties, or as a simple side dish. The next time you want to indulge in some hearty Italian flavors, give this antipasto salad a try – it’s sure to delight!
