Introduction:

Collard greens, a Southern classic and staple, are known for their slightly bitter taste and incredible nutritional benefits. This leafy green cabbage-like vegetable is packed with vitamins A, C, and K as well as fiber. Our Low Country Collard Greens recipe is the perfect dish to make when you want a taste of traditional Southern cuisine. Follow our simple guide on how to make the best Low Country Collard Greens for a mouthwatering and satisfying side dish.

Ingredients:

– 2 pounds fresh collard greens, washed and chopped

– 4 slices bacon, chopped

– 1 large onion, chopped

– 3 cloves garlic, minced

– 4 cups chicken stock (or vegetable stock)

– 1 tablespoon apple cider vinegar

– 2 teaspoons sugar

– 1 teaspoon salt

– 1/2 teaspoon crushed red pepper flakes (optional)

Instructions:

1. Clean the collard greens by washing them thoroughly in cold water. Remove the tough stems from each leaf and discard them. Roughly chop the leaves into smaller pieces.

2. In a large pot or Dutch oven over medium heat, cook your chopped bacon until it is crispy and browned. Remove the cooked bacon from pot, but keep the bacon grease in the pot.

3. Add the chopped onion to the pot with the bacon grease and cook over medium heat until softened and slightly caramelized (around 5 minutes). Add garlic and continue cooking for another minute.

4. Carefully add collard greens to the pot, one handful at a time, allowing them to wilt before adding more.

5. Once all of your collard greens have been added to the pot, pour in the chicken or vegetable stock, apple cider vinegar, sugar, salt, and crushed red pepper flakes (if using) and stir until everything is combined and the greens are evenly coated.

6. Bring the pot to a simmer and then reduce heat to low. Cover the pot and allow it to cook for an hour, stirring occasionally until your collard greens are tender.

7. After an hour, uncover your pot and continue to cook the collard greens on low heat for another half-hour, allowing some of the liquid to evaporate.

8. Once your collard greens have reached your desired tenderness, taste test and adjust seasoning if necessary.

9. To serve, spoon your Low Country Collard Greens into a large serving dish and sprinkle with cooked bacon bits.

Conclusion:

This Low Country Collard Greens recipe is a guaranteed hit as a delicious and nutritious side dish that pairs well with traditional Southern fare like fried chicken or barbecue. The rich flavors of bacon and onion complement the earthy taste of the collard greens, while the sweetness from the sugar and tang from apple cider vinegar adds depth to this soulful dish. Take a trip to the Southern table in the comfort of your own home with this delightful recipe.
