How to Make Mochi Ice Cream

Mochi ice cream is a delightful Japanese treat that combines the sweet taste of ice cream with the chewy texture of mochi, a traditional Japanese rice cake. With the perfect balance of flavors and textures, mochi ice cream has quickly become a favorite dessert for many. If you’re looking to recreate this unique treat at home, then you’re in luck. In this article, we will provide a step by step guide on how to make mochi ice cream.

Ingredients:

1 cup of sweet rice flour (also known as mochiko or glutinous rice flour)

1/4 cup granulated sugar

1 cup water

Cornstarch (for dusting)

1 pint of your favorite ice cream flavor

Equipment:

Microwave-safe bowl

Plastic wrap

Small ice cream scoop

Baking sheet

Instructions:

1. Prepare the ice cream balls

Using a small ice cream scoop, create equally-sized balls of ice cream and place them on a baking sheet lined with parchment paper. Freeze the balls for at least 2 hours or until they are firm.

2. Make the mochi dough

In a microwave-safe bowl, combine the sweet rice flour, sugar, and water and mix well until no lumps remain. Cover the bowl with plastic wrap and microwave for 2 minutes on high power.

3. Carefully remove the bowl from the microwave – it will be hot! Remove the plastic wrap and stir the mixture; it should start to look more translucent and sticky. Re-cover with plastic wrap and microwave for another 2 minutes on high power.

4. Lightly dust a clean surface with cornstarch. Carefully transfer the hot mochi dough onto the cornstarch-dusted surface using a spatula or spoon.

5. Allow the dough to cool down slightly for about 5 minutes, just enough so you can handle it. Start kneading the dough using a spatula or your hands (dusting your hands with cornstarch to prevent sticking).

6. Flatten the dough into a thin, even layer, about 1/8-inch thick. Allow the flattened dough to cool for a few minutes until it reaches room temperature.

7. Assemble the mochi ice cream

Using a round cookie cutter or a glass with a similar diameter to your ice cream balls, cut out circles from the flattened mochi dough.

8. Working quickly so the ice cream doesn’t melt, place an ice cream ball on top of one mochi circle. Gently wrap and stretch the mochi dough around the ice cream, pinching and sealing it at the bottom.

9. Repeat this process with the remaining mochi circles and ice cream balls.

10. Once all the mochi ice creams are assembled, wrap them individually in plastic wrap and freeze them for at least 30 minutes to firm up before serving.
