Dumplings are a delicious and comforting food that can be found in many cuisines around the world. Made from a dough of flour, dumplings can be boiled, steamed, or fried, and served with various dipping sauces, soups, or stews. In this article, we will explore three ways to make flour dumplings, each originating from a different culinary tradition.

1. Chinese Steamed Dumplings (Jiaozi)

Ingredients:

– 2 cups all-purpose flour

– 3/4 cup cold water

– 1/2 lb ground pork

– 2 cups finely chopped cabbage

– 2 green onions, finely chopped

– 2 cloves garlic, minced

– 1 tbsp soy sauce

– 1 tsp sesame oil

– Oil for brushing

Instructions:

1. In a mixing bowl, combine flour and cold water. Mix until a smooth dough forms. Knead for about 5 minutes. Let the dough rest for at least 30 minutes.

2. In another bowl, mix together the ground pork, cabbage, green onions, garlic, soy sauce, and sesame oil.

3. Divide the dough into small balls (about the size of a walnut) and roll each into a circular wrapper using a rolling pin.

4. Place a spoonful of filling in the center of each wrapper. Fold and pleat the edges to seal.

5. In a steamer basket lined with parchment paper or brushed with oil, arrange dumplings about an inch apart.

6. Steam over boiling water for about 15 minutes until cooked through.

2. Southern American Drop Dumplings

Ingredients:

– 2 cups all-purpose flour

– 1 tbsp baking powder

– 1 tsp salt

– 3/4 cup milk

– 1 tbsp vegetable oil

Instructions:

1. In a mixing bowl, whisk together flour, baking powder, and salt.

2. In another bowl, combine milk and vegetable oil.

3. Slowly add the wet ingredients to the dry ingredients, stirring until a sticky dough comes together.

4. Bring a pot of soup or broth to a simmer on the stove.

5. Using a spoon or cookie scoop, drop spoonfuls of dough directly into the simmering liquid.

6. Cover the pot with a lid and let the dumplings cook for about 15 minutes until they are cooked through and no longer doughy.

3. German Potato Dumplings (Kartoffelklöße)

Ingredients:

– 2 lbs potatoes

– 1 cup + 2 tbsp all-purpose flour

– 1 tsp salt

– 1/8 tsp nutmeg

– 1 egg

Instructions:

1. Boil potatoes with their skins on until tender. Let them cool, then peel and mash or grate them.

2. Add flour, salt, nutmeg, and egg to the mashed potatoes and mix until well combined.

3. Use your hands to shape the mixture into large dumplings (about 2 inches in diameter).

4. Bring a large pot of salted water to a boil and gently lower dumplings into the water.

5. Cook for about 15-20 minutes, until they rise to the surface.

6. Remove dumplings with a slotted spoon and serve with your favorite gravy or sauce.

In conclusion, flour dumplings are versatile and can be adapted to many different flavors and cooking methods. With these three recipes, you can experience new tastes while enjoying the comforting satisfaction of homemade dumplings. Happy cooking!
