Drawn butter is melted butter served as a dipping sauce for seafood dishes, especially lobster and crab. It’s incredibly versatile and simple to make, elevating the taste of your favorite seafood dishes. Here are three different methods to make your own drawn butter at home.

1. Stovetop Method:

This is the most traditional way to make drawn butter.

Ingredients:

– 1 cup (2 sticks) unsalted butter

Instructions:

1. Cut the butter into smaller pieces to allow for faster and more even melting.

2. In a small saucepan over low heat, melt the butter slowly. Stir occasionally to avoid burning.

3. As the butter melts, skim off any foam or impurities from the surface.

4. When the butter has fully melted, pour it through a fine-mesh strainer or cheesecloth to remove any remaining solids.

5. Serve immediately in individual dipping dishes alongside your favorite seafood.

2. Microwave Method:

This is a quicker, more convenient method for making drawn butter.

Ingredients:

– 1 cup (2 sticks) unsalted butter

Instructions:

1. Cut the butter into smaller pieces and place them in a microwave-safe bowl.

2. Cover the bowl with a microwave-safe plate or plastic wrap (with a small vent for steam).

3. Microwave on medium power, checking and stirring every 30 seconds until completely melted.

4. Skim off any foam or impurities from the surface.

5. Pour the melted butter through a fine-mesh strainer or cheesecloth to remove any remaining solids.

6. Serve immediately in individual dipping dishes alongside your favorite seafood.

3. Clarified Butter Method:

Making clarified butter results in pure golden fat without any milk solids, creating a richer flavor profile.

Ingredients:

– 1 cup (2 sticks) unsalted butter

Instructions:

1. Cut the butter into smaller pieces and melt slowly in a saucepan over low heat.

2. As the butter melts, skim off any foam from the surface.

3. Let the butter continue to cook until the milk solids separate and sink to the bottom of the pan. The butter will become clear, with a golden color.

4. Carefully pour the clarified butter through a fine-mesh strainer or cheesecloth, leaving the milk solids behind.

5. Serve immediately in individual dipping dishes alongside your favorite seafood.

Conclusion:

These three different methods for making drawn butter offer variations on a decadent dipping sauce for your seafood dishes. Try them all and find your favorite way to enjoy this classic accompaniment. Bon appétit!
