6 Simple Ways to Eat Zucchini

Zucchini, also known as courgette, is a versatile summer squash that can be enjoyed in a variety of ways. Packed with vitamins, minerals, and antioxidants, this green vegetable offers numerous health benefits. In this article, we share six simple ways to enjoy zucchini in your daily meals.

1. Grilled Zucchini

A quick and easy way to savor zucchini is by grilling it. Slice the zucchini lengthwise into thin strips and drizzle with olive oil, salt, and pepper. Place the zucchini slices on a hot grill or grill pan and cook until tender and slightly charred. Serve with a sprinkle of freshly chopped herbs for added flavor.

2. Zucchini Noodles

Zucchini noodles (zoodles) are a low-carb alternative to pasta. Using a spiralizer or vegetable peeler, create long, thin strands of zucchini. To cook the noodles, simply sauté them in a pan with a little oil for 3-5 minutes until tender. Mix your zoodles with your favorite pasta sauce and enjoy.

3. Zucchini Fritters

For a delicious appetizer or snack, try making zucchini fritters. Grate two medium-sized zucchinis and squeeze out the excess moisture using a clean towel or cheesecloth. Combine the grated zucchini with an egg, flour, salt, pepper, and any additional herbs or spices you prefer. Heat some oil in a frying pan and drop spoonfuls of the mixture into the hot oil. Fry until golden brown on both sides.

4. Baked Zucchini Chips

For a healthy alternative to potato chips, bake some zucchini chips at home. Thinly slice zucchinis into rounds using a knife or mandoline slicer. Lightly coat the slices with olive oil and seasonings of your choice such as salt, pepper, and paprika. Spread the zucchini slices on a baking sheet and bake at 225°F (110°C) for 1-2 hours, flipping them halfway through until crisp.

5. Stuffed Zucchini Boats

Stuffed zucchini boats are an easy, healthy, and flavorful dinner option. Hollow out the center of halved zucchinis and fill them with your choice of stuffing, such as ground meat, vegetables, herbs, and cheese. Bake the stuffed zucchini boats in the oven at 400°F (200°C) for about 20 minutes or until tender.

6. Zucchini Bread

Incorporate zucchini into your breakfast or dessert by making some zucchini bread. Combine grated zucchini with flour, sugar, eggs, oil, and spices like cinnamon and nutmeg, then pour the batter into a loaf pan. Bake at 350°F (175°C) for 50-60 minutes or until a toothpick inserted into the center comes out clean. Enjoy a slice of moist and flavorful zucchini bread on its own or with your favorite toppings.
