3 Ways to Thicken Ice Cream

As the temperatures rise and summer days become longer, there’s nothing quite like enjoying a delicious and refreshing ice cream. However, sometimes homemade ice cream can turn out too thin and lack that luxurious texture we’re all after. Don’t worry – we’ve got you covered! Here are three ways to thicken your ice cream for a perfect scoop every time.

1. Use a Custard Base

The traditional method of making a rich, thick ice cream is by using a custard base. A custard base is made by combining eggs, sugar, and milk or cream over low heat until the mixture thickens. The egg yolks give the ice cream an extra smooth texture due to their natural emulsifying properties.

To make a custard base for your ice cream, whisk together 4 egg yolks and 1/2 cup of sugar until pale and creamy. Heat 1 cup of heavy cream and 1 cup of milk in a saucepan over low heat until it reaches a gentle simmer. Slowly pour the hot mixture into the egg yolk mixture while continuously whisking to prevent curdling. Return the combined mixture back to low heat, stirring constantly until it thickens and coats the back of a spoon. Allow the custard to cool before mixing it with your desired flavorings and churning in an ice cream maker.

2. Add Starches or Gums

You can also thicken your homemade ice cream by incorporating starches such as cornstarch or tapioca flour into the base mixture. Starches help absorb water, preventing large ice crystals from forming during freezing – which results in smoother, denser ice cream.

To use starches as a thickening agent, dissolve 2 tablespoons of cornstarch or tapioca flour in 1/4 cup of cold milk or water before adding it to your warm ice cream base. Heat the mixture until it thickens and starts to boil. Allow it to cool, add your chosen flavors, and churn in an ice cream maker as per the manufacturer’s instructions.

Gums like guar or xanthan gum can also be used in a similar way to starches. Begin with just a small amount (1/8 teaspoon) and adjust as needed.

3. Increase Fat Content

Another way to achieve thicker ice cream is by using high-fat ingredients like heavy cream or even adding additional fat sources like cream cheese, mascarpone, or coconut cream. The higher fat content will help create a smoother, creamier texture that feels rich and indulgent on the palate.

To increase the fat content in your ice cream, substitute part of the milk with heavy cream or choose a full-fat milk option. Adding 1/4 cup of softened cream cheese or 1/2 cup of coconut cream to your base mixture can also contribute to a denser, richer texture.

Experiment with these different methods to find the perfect balance of thickness and flavor in your homemade ice cream. Remember to have fun and enjoy the process – because there are no mistakes when it comes to making this delightful frozen treat!
