3 Ways to Store Garlic Scapes

Garlic scapes are a popular ingredient among food enthusiasts, gardeners, and chefs. These tender, curly stalks shoot up from the garlic plant during the growth process and have a mild, sweet garlic flavor that adds a delicious touch to various dishes. Harvested in late spring or early summer, garlic scapes can be chopped up, sautéed, roasted, or even used in pesto. Preserving their freshness and flavor can extend their shelf life, allowing you to enjoy them throughout the year. Here are three ways to store garlic scapes effectively:

1. Refrigeration

Refrigeration is the easiest and quickest method for short-term storage of garlic scapes. To prepare the scapes for refrigeration:

– Rinse the garlic scapes thoroughly with cold water.

– Pat them dry with a clean kitchen towel or paper towel.

– Trim any brown tips or discolored parts off the ends.

– Bundle the garlic scapes together and wrap them loosely in a slightly damp paper towel.

– Place the wrapped bundle into a zip-top plastic bag or an airtight container, leaving it partially unsealed to allow some air circulation.

– Store the bag in the crisper drawer of your refrigerator.

This method will keep your garlic scapes fresh for up to two weeks, allowing you to use them as needed for various recipes.

2. Freezing

Freezing is an excellent option for long-term storage of garlic scapes while preserving their flavor and texture.

– Rinse and dry the scapes as described above.

– Chop the garlic scapes into 1-inch pieces or leave them whole, depending on how you plan to use them later.

– Blanch the scapes by dropping them into boiling water for 30 seconds before immediately transferring them to an ice bath. This step helps maintain their texture and bright green color.

– Drain the scapes well and pat them dry.

– Place the garlic scapes in a single layer on a baking sheet lined with parchment paper.

– Freeze them until solid and then transfer to a zip-top freezer bag or an airtight container, removing as much air as possible before sealing.

– Label the container with the date and contents.

Frozen garlic scapes will maintain their quality for up to six months in the freezer. Thaw them in the refrigerator or use directly from frozen in recipes that call for cooked garlic scapes, like soups, stews, or stir-fries.

3. Pickling

Pickling is both a delicious and creative way to store garlic scapes for an extended period.

– Rinse, dry, and trim the scapes as previously mentioned.

– In a clean, sterilized jar, layer whole or chopped garlic scapes with your choice of pickling spices or fresh herbs.

– Prepare a pickling brine by combining equal parts of water and vinegar (white or apple cider), along with salt and sugar to taste.

– Bring the brine to a boil and then pour it over the garlic scapes, leaving about ½ inch of headspace at the top of the jar.

– Seal the jar with an airtight lid and allow it to cool before refrigerating.

Pickled garlic scapes will be ready to eat after about one week of pickling. They can be stored for up to six months in the refrigerator. Use them in sandwiches, salads, or as garnishes to add bold flavor.

By choosing one of these three methods to store your garlic scapes, you can ensure that their vibrant taste remains intact and allows you to savor these delectable stalks all year long.
