Introduction:

Buro is a beloved Filipino dish traditionally made by fermenting rice and fish. Its unique flavor and appealing texture make it a delightful addition to any meal. Often considered an acquired taste, Buro has undeniably gained popularity in Filipino households across the globe. Today, we will explore three ways to make Buro, which will have you craving for more!

1. Classic Buro (Fermented Rice and Fish)

Ingredients:

– 2 cups uncooked glutinous rice

– 2 cups water

– 1/2 cup pink Himalayan salt

– 1 lb fresh fish (preferably catfish or tilapia)

– Banana leaves (optional)

Instructions:

1. Wash the glutinous rice thoroughly and drain. Cook with 2 cups of water until tender.

2. While the rice is cooking, clean the fish and remove any bones or scales. Cut the fish into small pieces.

3. In a glass container, mix the cooked rice, salt, and pieces of fish.

4. Lay banana leaves over the mixture (if using), and press lightly to ensure there are no air pockets.

5. Cover the container with a clean cloth or lid, allowing it to breathe slightly.

6. Leave the container in a cool and dark place for at least one week to allow fermentation.

2. Vegan Buro (Fermented Rice and Vegetables)

2. While the rice is cooking, peel and chop up your choice of vegetables into thin slices.

3. In a glass container, mix the cooked rice, salt, and sliced vegetables.

4. Lay banana leaves over the mixture (if using), and press lightly to ensure there are no air pockets.

5. Cover the container with a clean cloth or lid, allowing it to breathe slightly.

6. Leave the container in a cool and dark place for at least one week to allow fermentation.

4. Buro with Shrimp (Fermented Rice and Shrimp)
