3 Ways to Drink Ice Wine

Ice wine is a special type of dessert wine that originates from frosty climates, such as Germany and Canada. What sets it apart from other wines is the method of producing the wine, which involves picking frozen grapes off the vine in the middle of the night during frigid temperatures. The result is a highly concentrated and exceptionally sweet wine that tantalizes the taste buds. Here, we share three different ways to drink ice wine to make the most of this unique and delectable beverage.

1. Sipped Straight Up

The most traditional way to drink ice wine is to enjoy it as it is, without any additional components. This allows you to fully appreciate its rich flavors and velvety texture. To do so, simply pour a small amount of ice wine into a white wine or dessert wine glass and serve it chilled — around 45-50°F or 7-10°C. It’s important not to serve ice wine too cold, as it can mute the complexities in its aroma and flavor profile. Enjoy each sip slowly, savoring the delicious interplay of sweetness, acidity, and fruity notes.

2. Paired with Decadent Desserts

Ice wines have such an intense sweetness and depth of flavor that they pair exceptionally well with a range of desserts. Some classic options include chocolate or fruit-based concoctions that complement the fruity characteristics of the wine. Examples of excellent pairings are rich chocolate cakes, raspberry tarts, or creamy panna cotta topped with berries. You can also experiment with more exotic combinations like spiced poached pears or even savory blue cheese for contrast. In this case, serve ice wine in normal portions alongside your chosen dessert and sip it in between bites for an exquisite experience.

For those interested in experimenting with different ways to indulge in ice wine, consider using it as a base for craft cocktails. Its natural sugar content and luxurious texture make it a great foundation for mixing up fun and creative beverages. Examples of innovative ice wine cocktails include an “Ice Wine Martini” made with vodka, ice wine, and a twist of lemon or an “Ice Wine Bellini” which combines sparkling wine, ice wine, and peach puree. Simply mix your desired combination of ingredients in a shaker with ice, then strain into a chilled glass and enjoy.
