How to Cook Chicken Feet

Introduction:

Chicken feet may not be a typical item on your dinner menu, but this delicacy is popular in many cultures around the world. Known for their unique texture and scrumptious flavor, chicken feet can be a delicious addition to your cooking repertoire. In this article, we’ll provide you with a step-by-step guide on how to prepare and cook chicken feet.

Materials and Ingredients:

– 1 lb of chicken feet

– Water for boiling

– 1 tbsp salt

– 2 tsp baking soda

– 3 cloves of garlic, minced

– 1 tbsp fresh ginger, minced

– 1/4 cup soy sauce

– 1/4 cup rice wine or sherry

– 2 tbsp sugar

– Green onions and cilantro for garnish

Step 1: Prepare the Chicken Feet

Before cooking the chicken feet, you’ll need to properly prep them. Begin by rinsing the chicken feet under cold water to remove any dirt or debris. Next, use sharp kitchen shears to trim off the nails from each foot. While doing this, also look out for any rough patches or dark-colored spots on the skin’s surface and remove them too.

Step 2: Blanch the Chicken Feet

To ensure tender and flavorful chicken feet, blanching is an essential step. Fill a large pot with enough water to submerge all the chicken feet you have. Add salt and baking soda to the water, then bring it to a rolling boil. Carefully add the prepared chicken feet into the boiling water for about two minutes. After two minutes, remove them using a slotted spoon and immediately place them in a bowl of ice-cold water. Blanching helps rid of any unpleasant odor in the chicken feet and will give them an appetizing appearance.

Step 3: Cook the Sauce

In a saucepan, heat a tablespoon of oil over medium heat. Add minced garlic and ginger, stirring frequently until fragrant and slightly golden brown. Pour in the soy sauce, rice wine or sherry, and sugar. Allow the sauce to simmer for a few minutes, stirring occasionally to dissolve the sugar. Remove the saucepan from heat once the sauce thickens.

Step 4: Braise the Chicken Feet

Place the blanched chicken feet into a large pot or slow cooker. Pour the sauce over them and mix well to ensure each foot is evenly coated with the mixture. Cover the pot with a lid or aluminum foil. Cook on low heat for 1½ to 2 hours, turning over halfway through to ensure uniform cooking.

Step 5: Test the Chicken Feet

After 1½ hours of braising, poke one of the chicken feet with a fork to see if it’s tender enough. The fork should go in easily, indicating that it’s perfectly cooked.

Step 6: Serve and Garnish

Once tender, gently remove the chicken feet from the pot. Place them in a serving dish and pour any remaining sauce on top. Garnish with freshly chopped green onions and cilantro for a pop of color and flavor. Serve hot as an appetizer or alongside steamed rice as part of a hearty meal.
