How to Taste Dark Chocolate: 14 Steps

Step 1: Choose the Right Chocolate

When selecting dark chocolate for tasting, opt for high-quality chocolate from a reputable brand or artisan. Look for chocolates with at least 70% cocoa content to ensure a rich and flavorsome experience.

Step 2: Prepare Your Palette

Before you begin tasting, cleanse your palate to avoid any lingering tastes from your last meal. Drink some water or eat a plain cracker.

Step 3: Read the Ingredients

Take a moment to read the ingredients on the chocolate packaging. This will provide an insight into the flavor undertones you can expect during your tasting.

Step 4: Break the Chocolate

Break off a small piece of the dark chocolate and notice the “snap” sound it makes. A quality chocolate should have a clean, crisp break.

Step 5: Examine the Appearance

Observe the color and texture of the chocolate; high-quality dark chocolate should have a matte finish and display no cracks or blemishes.

Step 6: Smell the Aroma

Bring the piece close to your nose and take a deep breath. Note any fruity, earthy, or floral undertones in its aroma.

Step 7: Place Chocolate on Your Tongue

Place the piece of chocolate on your tongue, allowing it to warm up. As it begins to melt, it will release its unique bouquet of flavors.

Step 8: Let It Melt Slowly

Avoid chewing or swallowing immediately; instead, allow the chocolate to melt slowly in your mouth, savoring each layer of flavor that unfolds.

Step 9: Focus on Flavor Profiles

Pay attention to prominent flavors such as fruits, nuts, or spices. Also, perceive more subtle notes that emerge as the dark chocolate melts on your tongue.

Step 10: Observe the Texture

As the chocolate melts, notice its texture and mouthfeel: it can range from smooth and creamy to dry and chalky.

Step 11: Breathe Through Your Nose

As you savor the chocolate, breathe gently through your nose. This will help to intensify the flavors and release even more nuanced aromas.

Step 12: Identify the Finish

As the chocolate melts completely, identify the length of its finish; a high-quality dark chocolate will have a long-lasting and satisfying aftertaste.

Step 13: Cleanse Your Palate

Before sampling a new variety of dark chocolate, cleanse your palate again with water or a plain cracker to avoid flavor contamination.

Step 14: Compare and Enjoy

After completing this tasting ritual, you will have a deeper appreciation for each unique dark chocolate and its particular flavor profile. Experiment with different percentages of cocoa content and origins to discover a whole new world of chocolate!
