The Best Veggie Enchiladas You’ll Ever Make

When it comes to comfort food, enchiladas reign supreme. There’s something about the combination of tortillas, a rich sauce, and a generous filling that feels like a warm hug on a plate. But who says that you need meat to make this dish unforgettable? These best veggie enchiladas will change even a carnivore’s mind and prove that vegetables can star in any showstopper dish.

Ingredients:

– 2 tablespoons olive oil

– 1 large onion, diced

– 1 red bell pepper, diced

– 1 green bell pepper, diced

– 2 zucchinis, diced

– 1 cup corn kernels, fresh or frozen

– 2 cloves garlic, minced

– 1 teaspoon cumin

– 1 teaspoon chili powder

– Salt and pepper to taste

– 2 cups homemade or store-bought red enchilada sauce

– 8 flour or corn tortillas

– 2 cups shredded cheese (cheddar or a blend of Monterey Jack and cheddar)

– Fresh cilantro for garnish

– Avocado slices for serving

Instructions:

1. Preheat your oven to 375°F (190°C).

2. In a large frying pan over medium heat, warm the olive oil. Add the onion, bell peppers, and zucchini to the pan. Cook until the vegetables are softened and starting to brown – about 5 minutes.

3. Stir in the corn and garlic and cook for an additional minute. Season with cumin, chili powder, salt, and pepper.

4. Pour about half a cup of the enchilada sauce into the bottom of a baking dish and spread it around to cover.

5. Warm your tortillas according to package instructions; this will make them pliable and easier to roll.

6. Lay out a tortilla and spoon a generous amount of the vegetable mixture down the center, sprinkle some cheese over the top of the veggies then roll up tightly. Place seam side down in the baking dish. Repeat with remaining tortillas.

7. After all your enchiladas are arranged in the dish, pour the remaining red sauce over them and sprinkle with whatever cheese you have left.

8. Bake uncovered in the oven for about 20 minutes until cheese is bubbly and starting to brown on top.

9. Let cool slightly before serving garnished with fresh cilantro and avocado slices on top.

These veggie enchiladas are more than just a meal; they’re an experience in flavor and texture that will keep you coming back for more. Whether you’re vegetarian or just looking to incorporate more veggies into your diet, you won’t miss the meat when you have such hearty vegetables wrapped in soft tortillas and smothered in tangy sauce and melted cheese. This might just become your new go-to comfort food!
