How to Bake a Ham Shank

Introduction:

Baking a ham shank is a delicious and satisfying way to prepare a savory, mouth-watering meal. The ham shank is the lower portion of the pig’s leg and is often packed with flavor due to its higher fat content. In this step-by-step guide, we’ll take you through the process of baking a ham shank that will impress your family, friends, and guests.

Ingredients:

– 1 ham shank (approximately 5-7 lbs)

– 1 cup brown sugar

– 1/4 cup honey

– 1/4 cup Dijon mustard

– 2 tbsp apple cider vinegar

– 1/2 tsp ground cloves

– 1/2 tsp ground cinnamon

– Salt and pepper, to taste

Instructions:

1. Preheat your oven: Before you begin, preheat your oven to 325°F (163°C). This will ensure that the temperature is consistent throughout the cooking process.

2. Prepare the ham shank: Remove any excess fat or skin from the ham shank, leaving just a thin layer (about 1/8 inch) on the surface. Rinse the ham under cold water to remove any residue or debris, then pat it dry using paper towels.

3. Score the ham: Using a sharp knife, score the surface of the ham by making diagonal cuts approximately an inch apart across the entire surface. Make sure not to cut into the meat – only score through the thin layer of skin and fat. Next, score in the opposite direction to create a diamond pattern.

4. Season with salt and pepper: Season all sides of the scored ham generously with salt and black pepper.

5. Place in baking dish: Place the prepared ham shank into a deep baking dish or roasting pan lined with aluminum foil for easy cleanup.

6. Bake the ham shank: Bake the ham uncovered in the preheated oven for 1 hour and 30 minutes.

7. Prepare the glaze: In a small saucepan, combine the brown sugar, honey, Dijon mustard, apple cider vinegar, ground cloves, and cinnamon. Heat over medium heat until all ingredients are incorporated and you have a smooth and glossy glaze.

8. Glaze the ham: After 1 hour and 30 minutes of baking time, remove the ham from the oven and brush generously with the prepared glaze. Make sure to coat all sides of the ham evenly.

9. Return to oven: Place the ham back into the oven and continue to bake for another 30 minutes or until your desired level of doneness is achieved.

10. Rest and serve: Once fully cooked, remove your baked ham shank from the oven and let rest for 15-20 minutes to allow the juices to redistribute. Then carve your perfectly tender and flavor-packed masterpiece to serve and enjoy!
