How to Make Fry Jacks: 12 Steps

Fry jacks are a popular Belizean breakfast staple. These delicious, fluffy, deep-fried dough pockets are perfect for dipping into your morning coffee or enjoying with savory dishes. If you’re curious about how to make these tasty treats at home, just follow these 12 simple steps:

1. Gather your ingredients: For this recipe, you will need 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of salt, 1 tablespoon of sugar, 4 tablespoons of cold shortening or lard, and about 3/4 cup of cold water.

2. Combine the dry ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.

3. Cut in the shortening: Using a pastry cutter or two knives, cut the shortening into the flour mixture until it resembles coarse crumbs.

4. Gradually add water: Slowly add cold water to the mixture while stirring with a wooden spoon. Continue to mix until a soft dough forms.

5. Knead the dough: Lightly flour your work surface and knead the dough for about 3-5 minutes until it becomes smooth and elastic.

6. Let the dough rest: Shape the dough into a ball and cover it with a clean kitchen towel or plastic wrap. Allow it to rest at room temperature for about 20-30 minutes.

7. Divide and roll out the dough: After resting the dough, divide it into 6-8 equal portions. Roll each portion out on a floured surface into a thin circle or rectangle (about 1/8-inch thick).

8. Cut slits (optional): This step is optional but helps create that puffy interior when frying. Use a sharp knife to cut two parallel lines in each rolled-out piece of dough without cutting all the way through.

9. Heat the oil: In a deep frying pan or pot, heat about 2-3 inches of vegetable oil to 350°F (175°C). Use a deep-frying thermometer to ensure the temperature is accurate.

10. Fry the dough: Carefully slide one piece of dough into the hot oil. It should puff up immediately. Fry for about 30 seconds to 1 minute on each side or until golden brown, using a slotted spoon to flip it.

11. Drain and observe: Remove the fried jack from the oil using a slotted spoon and transfer it to a plate lined with paper towels. This will help absorb any excess oil.

12. Serve and enjoy! Fry jacks are best enjoyed warm, so serve them immediately alongside your favorite breakfast items or as an appetizer with dipping sauces.
