How to Make Rice Vinegar: 10 Steps

Rice vinegar is a staple ingredient in many Asian dishes and can be used for a variety of purposes in the kitchen. Homemade rice vinegar offers a unique freshness and superior taste compared to store-bought varieties. Follow these 10 simple steps to make your own rice vinegar at home.

1. Gather your ingredients: You will need 2 cups of cooked white or brown rice, 4 cups of water, and 2 tablespoons of sugar.

2. Allow the rice to cool: After cooking the rice, allow it to cool down to room temperature. This will help facilitate fermentation later on.

3. Sterilize your container: Use a glass or ceramic container with a tight-fitting lid to store your rice mixture during fermentation. Clean and sterilize the container thoroughly before use.

4. Mix water and sugar: In a separate bowl, dissolve sugar into water by stirring until completely combined.

5. Add rice to the container: Spoon cooled rice into the clean, sterilized container, spreading it evenly across the bottom.

6. Pour sugar water over rice: Carefully pour the sugar water mixture over the rice, completely submerging it.

7. Cover the container: To keep contaminants out during fermentation, tightly seal your container using its lid or plastic wrap.

8. Allow fermentation to take place: Store your container in a dark, cool area where its temperature can remain consistent (around 70°F or 21°C). The fermentation process typically takes two-to-four weeks.

9. Monitor the progress: Check on your rice vinegar by carefully removing the lid every few days to release gas buildup and stir. Watch for signs of fermentation, such as bubbling and a pleasant aroma resembling that of store-bought rice vinegar.

10. Filter and store finished product: Once your homemade rice vinegar has reached its desired acidity level, strain it through a cheesecloth or fine mesh strainer to remove solids. Store your finished rice vinegar in a sterilized, airtight bottle in a cool and dark place.

By following these steps, you’ll have delicious, homemade rice vinegar perfect for cooking, pickling, or adding extra tang to your favorite salad dressing. Experiment with different types of rice and sugar levels to find the perfect balance of flavors to suit your taste buds.
